Shepherd's Pie (MY Version)
1 lb!. ground beef
Mashed potatoes (about 8 servings)*
Macaroni and Cheese
In the bottom of a casserole dish, spread a layer of browned ground beef!.
For the next layer spread a layer of macaroni and cheese!.
Finally top with the mashed potatoes!.
I put a few sliced of American Cheese on top, then pop it into a 400 degree oven for about 20 minutes!.
VARIATIONS: Add a layer of corn!. Season the ground beef with a taco seasoning!.Www@FoodAQ@Com

8 large potatoes, peeled
2 tbsps!. onion salt
1 pint sour cream or plain yogurt
4 tbsps!. butter, melted
1 cup grated cheese
DIRECTIONS:
Cook the potatoes in boiling water until tender, about 20 to 30 minutes!. Drain and then mash the potatoes with the onion salt and sour cream!. Add the butter and mix well!.
Spray a 2 quart casserole dish with a non-stick vegetable spray!. Place the potato mixture in the casserole dish and press down slightly!.
Top the potato mixture with the cheese!.
Cover the casserole and refrigerate for at least an hour before baking!.
(This can be made a day in advance and baked just before serving)!.

I make a mock pierogie casserole using cheese, noodles & leftover mashed potatoes!. Saute a small chopped onion in butter, boil your noodles (but do it al dente so they don't get mushy), then mix in the cheese & mashed potatoes (plus a little extra milk for creaminess - plus the potatoes & noodles will soak up the moisture)!., & add a little salt & pepper!. Save a little of the shredded cheese & pop the casserole into the oven until the cheese is all melty & bubbly !.!.!. yum!
