How to make homemade eggplant pesto??!


Question: How to make homemade eggplant pesto!?!?
I bought some cheap eggplants the other day, and I was wondering what to do with them, and since I love pesto on pasta, I thought that I would make eggplant pesto!. Only problem is I don't know how to!.
Does anyone out there have a really nice and easy recipe that they could give me!.

EGGPLANT CAVIAR

2 small to medium eggplants, 11/2 to 2 pounds
1 small onion, minced
1 clove garlic, minced
1 small tomato, juiced and diced
1 tablespoon sesame oil
1 tablespoon fresh lemon juice
3 tablespoons flat Italian parsley, minced
Kosher salt and freshly ground black pepper to taste

Make a few slits in the eggplants and bake in a 450 oven about 30 minutes or until it collapses and becomes soft!. (This can also be done on a charcoal or gas grill!.) Cool!.

Mince the garlic and onion by hand or puree in a food processor!. Scrape out flesh from eggplants into a mixing bowl with onions and garlic, discarding skins!. Mash with a fork or puree in a food processor along with remaining ingredients!.Www@FoodAQ@Com

INGREDIENTS:

2, 1-pound eggplants, halved lengthwise
1 cup olive oil
1/4 cup tahini (sesame seed paste)*
3 tablespoons fresh lemon juice
1 garlic clove, chopped
1/2 tsp paprika (optional)
salt & pepper to taste

METHOD:

Preheat oven to 400°F!. Generously oil rimmed baking sheet and the eggplants!. Place eggplant halves, cut side down, on sheet!. Roast until eggplant is very soft, about 45 minutes!. Cool slightly!. Using spoon, scoop out pulp from eggplant into strainer set over bowl!. Let stand 30 minutes, allowing excess liquid to drain from eggplant!.

Transfer eggplant pulp to processor!. Add 1 cup oil, tahini, lemon juice, and garlic; process until almost smooth!. Season to taste with salt and pepper!. Add paprika!. Transfer to small bowl!. (Can be made 1 day ahead!. Cover and chill!. Bring to room temperature before serving!.)Www@FoodAQ@Com
