Question: Does anyone have a recipe for a white loaf that has a hard and crunchy crust, but soft bread!?
I'm using dried active yeast, that you have to reactivate first in water, and I'd like to make a loaf that's simelar to baguette in texture!.Www@FoodAQ@Com

Professional bakeries use steam to make a crunchy crust!. Place a cookie sheet on the rack underneath the rack the bread will be on and carefully pour approximately 1 inch of water into it!. By the time the bread is finished, the water will be evaporated!. Or you could lightly mist the dough when you first put it in the oven and again after 3 minutes!.Www@FoodAQ@Com

You need to make a loaf of french bread, and bake it accordingly, w/ the water spray or ice in the oven as you put it in!. THis gives the texture on the exterior you are looking for!.Www@FoodAQ@Com

Brush the top with an egg wash before baking (whisk an egg with some water; or just the yolk & some water, until frothy)Www@FoodAQ@Com
