Does anyone have a good recipe for Champagne Brie soup?!


Question: Does anyone have a good recipe for Champagne Brie soup!?
I'm substituting Spanish Cava for the Champage and using Camembert and Delice D' Bourgogne for the cheeses!. I'm wondering if anyone has a recipe and if so, what they would think about adding a little bit of lemon essence and dill to this kind of soup!. It's a brunch menu for my family that's going to be accompanied by a pan-seared salmon with a champagne and lemon-dill caper cream sauce with ciabatta toast topped with a poached egg with capers and fresh cracked sea salt and Tellicherry pepper!. I would be indebted to anyone that can help me make this meal complete!Www@FoodAQ@Com


Answers:
1/2 lb!. unsalted butter

1/2 Cup flour

2 Quarts seafood stock or clam juice

5 Cups whipping cream

1 1/2 Teaspoon red pepper

1 1/2 lbs!. Brie cheese (remove rind and cut up)

2 Cups dry champagne


1 Cup green onions (minced)

Salt and pepper





Melt butter over low heat, add flour and cook 3 minutes constantly whisking!. Add stock and cook and whisk until flour is absorbed, about 3 to 4 minutes!. Bring to boil, return to simmer for 10 minutes!. Add cream, simmer 5 minutes, again whisking constantly!. Add red pepper and cheese!. Cook and stir until melted!. Add Champagne, and green onions!. Simmer 3 to 4 minutes!. Cover and let stand 10 minutes!. Salt and pepper, stir and serve!.Www@FoodAQ@Com
