How about a nice Risotto for a starter then a good steak with sauted portobello and white button mushrooms!? That's a good dinner!.
For Risotto I have included a link below with lots of great types you could do!.
A great grilled steak, like a tenderloin, NY strip or Ribeye (if they like that much fat in their steak) work great!. I use a marinade of Worcestershire Sauce and Weber's Chicago steak seasoning, put the steaks in a gallon size ziploc, pour on enough Worcestershire Sauce to cover each side of the steak then sprinkle on the steak seasoning to both sides, stick the steaks in the fridge for about 30 minutes to marinade!. When you are ready to start cooking, go ahead and do the mushrooms then toss on the steaks when mushrooms are about halfway cooked, for timing!.
Sauted Mushrooms:
Two large portobellos (sliced and chopped)
1 container sliced white button mushrooms
1 small to medium onion (white or yellow)
2 cloves peeled and minced garlic (can use 2 tsp bottled garlic instead)
2 tsp extra virgin olive oil (or vegetable oil)
3 tablespoons butter
1 tablespoon Weber's Chicago steak seasoning
salt and pepper to taste
Put oil and butter into large skillet, nonstick works the best!. Turn burner onto medium high heat between 6 and 7 if yours have numbers on the dial!.
Once butter has melted into oil add garlic and onion!. Cook for about 3 minutes until the onions sweat, that is they start to turn sort of clear in appearance!.
Add mushrooms and mix into onions and garlic mixture!. Continue to cook and stir frequently to get an even cook!.
Once mushrooms start to look like they are cooked, they loose all of the fresh color and have the cooked texture!. Add steak seasoning and mix in!.
Continue to cook the mushrooms to desired consistency!. I like mine a little browned so I turn the heat up a little and let the mushrooms get a little welldone!. Taste a mushroom when you think they are ready that will tell you if they are done!. Add salt and pepper to season to your prefered taste!.
Steaks should be ready (cooked to the desired doneness that your parents prefer), place a steak and mushrooms on 2 plates and serve up hot!.
You may want to offer some steak sauce if your parents prefer A1, Heinz57, Lea and Perins!. The steaks will taste great even without sauce!.
For dessert you could do a chocolate fondue and give them a bunch of fresh strawberries, bananas, marshmallow, cubed poundcake and some skewers to use to dip with!.Www@FoodAQ@Com
