1/3 cup water
2 cups all-purpose flour
1/2 teaspoon salt


In a medium bowl, beat the egg!. Mix in the water!.
In a large bowl, combine the flour and salt!. Create a well in the center of the mixture and slowly pour in the egg and water!. Mix well!. If the mixture is too dry, increase the amount of water one teaspoon at a time until a pliable dough has formed!.
On a lightly floured surface, knead the dough until elastic!. Cut dough into two separate balls!. Cover the balls with a damp cloth for a minimum of 10 minutes!.

Ingredients
1 lb ground beef or ground pork or ground chicken
1 teaspoon of minced ginger (or a little more)
2 cups of finely chopped cabbage
1/4 lb bean sprout
1/2 cup of shredded carrot
3 green onion, finely chopped
2 tablespoons oyster sauce (usually can be found at the grocery, but you can check your local asian market)
black pepper
20 large square egg roll wraps
vegetable oil (for frying)
your favorite sweet and sour sauce


Directions
1Stir fry meat & ginger in a wide skillet over high heat untily lightly browned, 2-3 minutes!.
2Add cabbage, bean sprouts, carrot & green onions; cook 2 minutes!.
3Stir in oyster sauce and season with black pepper!.
4Remove from heat & let mixture cool!.
5Use 2 tablespoons for each egg roll!.
6To Wrap: place filling diagonally on wrapper, fold corner over filling, roll roughly half-way to cover filling, fold up both sides roughly against filling; moisten ends of last flap with water, roll over flap to seal; lay flap side down until ready to cook!.
7Deep fry in oil (it says 350, if you use an electric wok), I do it in a cast iron skillet on the stove!.
8Fry 2-3 mintues, turning occasionally, until golden brown!.
9Drain on paper towels!.

INGREDIENTS
1 egg, beaten
3/4 cup cold water

7/8 cup all-purpose flour
2 tablespoons peanut oil





DIRECTIONS
In a medium bowl, whisk together egg, cold water and salt!. Mix in all-purpose flour 1/3 at a time!. Allow the mixture to stand 15 minutes at room temperature!.
Heat a wok over high heat!. Remove from heat and thinly coat with 1 tablespoon peanut oil!. Reduce heat to low!. While wok is still warm, pour 1/4 of the egg mixture in an approximately 8 inch circle!. Rotate wok quickly to spread an even layer of batter!. Cook over low heat 45 seconds to 1 minute, until bottom is golden brown and edges begin to curl!. Carefully remove from heat and place on a paper towel, golden brown side down!.
Repeat the wok procedure with remaining batter, 1/4 at a time!. Rub wok with remaining tablespoon of peanut oil after the second wrapper has been made!.

Ingredients
1 large egg, lightly beaten (set aside a small amount for sealing)
2 cups flour
1 teaspoon salt
1/2 cup very cold water

Directions
1Combine ingredients to make a dough!.

2Cover and let rest for 10 minutes!.

3Knead until smooth and elastic!.

4Divide into 16 pieces!.

5Roll into 6 inch squares!.

6(Dough should be very thin)!.

7Stack rolled squares separately with wax paper between each one!.

8Keep covered so they will not dry out while making the entire recipe of wrappers!.

9Fill by making a line of your favorite filling about 1/2 from top and side edges!.

10Fold in each side over filling!.

11Brush on a small amount of saved egg along remaining side edges and the bottom edge!.
