Teriyaki has 3 basic ingredients: soy sauce, pineapple juice and fresh ginger root!. That said, let's look at the ingredients!. Soy sauce is an Asian sauce made from fermented soy beans!. It tastes VERY salty!. For that reason, I like to use low sodium soy sauce when I make teriyaki!. You can cut the salty taste of soy by adding fresh peeled and grated ginger root!. It also adds a bright taste!. Pineapple juice adds a sweet taste, especially if it's Hawaiian pineapple (hint: buy Dole's)!. The basic recipe is about 1/2 cup of (low sodium) soy sauce!. Take a "finger" from a hand of fresh ginger root!. Peel it, and cut about 5 or 6 "coins" about 1/4 inch thick!. The coins should be about the diameter of your thumb!. Lay them on a cutting board, lay the flat side of a knife on one, and smash it with the back of your fist!. You'll end up with a coin about the size of a silver dollar!. Add the 5 or 6 to the soy sauce!. Add 2 to 3 tbsp of pineapple juice!. Cover and refrigerate!. After 1/2 hour or so, taste!. If it's too salty, add more ginger!. If it's too bitter, add more pineapple!. If it's too sweet, add a little more soy sauce!.

That's your basic recipe!. Variants include brown sugar, crushed garlic, herbs, wine, etc!. It's wide open!. Add whatever you like!.Www@FoodAQ@Com
