Salt and pepper to tasteWww@FoodAQ@Com

REAL Fettuccine Alfredo

1 lb!. Fettuccine, cooked al dente

6 tbsp!. butter
1/2 pint heavy cream
3 egg yolks
3/4 cup freshly grated Parmesan
Freshly ground pepper

Melt butter in pan!. Add pasta, mix well and cook for a minute!. Stir in cream, cook another minute!. Add egg yolks, mix quickly to avoid scrambling!. Add 1/2 the Parmesan, mix well and serve with additional Parmesan on the side and black pepper!.Www@FoodAQ@Com

I cook a one pound pack of Barilla brand fettuccine very al dente - about 10 minutes!. I warm up 2 cups of heavy cream in a pot with a stick of butter (1/2 cup/8 tablespoons)!. Sometimes I'll add about 2 tablespoons of cream cheese if I have any!. I reserve about a cup of pasta water when I drain the pasta!. I then add the drained pasta to the cream and butter, warming thru over low heat!. I add about a half cup of grated Parmesan cheese (grated manually by me, or the food processor), some fresh cracked pepper, and a lil bit of garlic powder and stir!. I usually add another 1/4 of cheese and more pepper!. If it binds up too much, I thin it out with a bit of the reserved pasta water!.

I've also added cooked diced/cut up chicken and/or cooked diced bacon before serving, as well as fresh peas when I want more than just pasta!.

Sprinkle with more grated cheese on top and serve!.Www@FoodAQ@Com

2/3C heavy cream--NOT milk

2 Tblspoon Butter
1 clove Fresh garlic
parmesan cheese from a can(not fresh)
Splash of white wine
Pinch of salt!.

Mince the Garlic and simmer in the butter for about ten minutes on med heat!. Do not brown!. Add in the cream and bring to a low boil on medium heat!.

When the cream has reduced, it will start to turn yellow and thicken!. Add in about 1/2 parmesan cheese and remove from heat then a bit of wine to thin to correct the thickness!. Add the wine last so it does not entirely evaporate!.

Toss in pasta and add minced fresh parsley

about enough for 1/2 pound of Fettuchini-- good with shrimp, veggies, etc!.Www@FoodAQ@Com

I got this years ago from a copy cat link for olive garden!. I love it and so does everyone I make it for! I've tweaked it a bit through the years!. It's a heart attack waiting to happen, though!.!.!.! LOL!

1 8oz pkg cream cheese
1 small container shredded parmesean cheese
1 stick real butter
1 tbls garlic or garlic powder
1 small container heavy whipping cream
salt & pepper to taste

blend all ingrediants in a sauce pot until melty completely, serve!.!.!.!.

mmmmmm!!!Www@FoodAQ@Com

well, the real way to make it is to toss the pasta in butter and cream, then toss in the parmesean!.

Many people are used to pouring a white sauce over the pasta that has already been made!. (Just make a bechamel, then add parmesean!.!.!.but this isn't authentic!.!.!.it tastes okay though)!.Www@FoodAQ@Com

This is how I do it:

Melt about 1/4 cup butter, then add about 4 oz cream cheese and stir till smooth, add 1 tsp garlic powder, 1 cup milk and
about 3 oz parm!. cheese

and I like to add a little cajun seasoning to spice it up a bit!.Www@FoodAQ@Com

Quick Alfredo:

milk
cream cheese
garlic
basil
oregano
Parmesan cheese

Amounts are up to you!.!.!.I usually just start slow and build to taste!. Be sure you melt the cream cheese in the milk over very low heat!Www@FoodAQ@Com

1/2 cup butter
1 cup heavy cream
1/2 cup grated parm cheese
1 T pesto

heat butter and cream to a boil in sauce pan!.remove from heat add parm &pesto stir until cheese is smooth and meltedWww@FoodAQ@Com

i get a jar of ragu!. you can add garlic and basil!Www@FoodAQ@Com
