One of my faves is sauted zucchini and yellow squash with onions and tomatoes!. Very healthy, hearty and yummy!.

Saute a whole sliced or cubed onion and a couple of minced garlic cloves in olive oil!. Add two sliced zucchini and one or two yellow squash depending on the size!. Saute all until veggies start to become soft!. Add a can of diced/stewed tomatoes!. Salt & pepper to taste, sometimes I add Italian seasoning!. Simmer until veggies are done to your taste!.Www@FoodAQ@Com

Slice red Potatoes about 1/2 inch thick and put butter flavored pam on a cookie sheet and spray some on the potatoes too!.!.!.!.!.bake in a 350 oven until soft!.!.!.!.!.!.!.!.I call them my mocked baked tater!.!.!.!.!.!.only calorie is in the potatoe!.

Fresh boiled green beans!.

It's not healthy, but I grew up with fresh catfish dinners!. Always served was fried potatoes and cornbread!. I can't imagine a catfish dinner without them!.Www@FoodAQ@Com
