Oh, I have something I LOVE!!! So do my friends :-)

Ok, boil some tagliatelle,
while that's cooking chop an onion and some mushrooms,
get tin tuna in sunflower oil,
drain the oil from the tuna into a pan and fry/cook the onion and mushrooms in the oil,
drain cooked tagliatelle,
stir in mushrooms, onions, tuna and some double cream (I use Elmlea 55% less fat!!)
stir over low heat,
serve!!

Clean plates guaranteed, and it only takes about 15 mins total :-)Www@FoodAQ@Com

chicken marsala
it is my fav recipe ever
with some onions and mushrooms
the best
Here:

Ingredients:

1/2 cup all-purpose flour
1 tablespoon Essence, recipe follows
2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
1 tablespoon olive oil
4 tablespoons butter
3 cups sliced mushrooms (cremini, oyster, shiitake)
3/4 cup Marsala
1 cup chicken stock
Salt and freshly ground black pepper
Chopped chives, for garnish

Directions:

In a shallow bowl or plate combine the flour and Essence and stir to combine thoroughly!. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour!.

Heat the oil in a large skillet over medium-high heat until very hot but not smoking!. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side!. Transfer to a plate and set aside!. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms!. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid!. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan!. When the wine has reduced by half, add the chicken stock and cook for 3 minutes, or until the sauce has thickened slightly!. Lower the heat to medium and return the chicken breasts to the pan and continue to cook until they are cooked through and the sauce has thickened, about 5 to 6 minutes!. Swirl in the remaining 2 tablespoons of butter, add salt and pepper, to taste!.Www@FoodAQ@Com

Mexican Lasagna:

1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Preheat the oven to 425 degrees F!.

Preheat a large skillet over medium high heat!. Add 2 tablespoons extra-virgin olive oil - twice around the pan!. Add chicken and season with chili powder, cumin, and red onion!. Brown the meat, 5 minutes!. Add taco sauce or stewed or fire roasted tomatoes!. Add black beans and corn!. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste!.

Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil!. Cut the tortillas in half or quarters to make them easy to layer with!. Build lasagna in layers of meat and beans, then tortillas, then cheese!. Repeat: meat, tortilla, cheese again!. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly!. Top with the scallions and serve!.Www@FoodAQ@Com
