Question about cake flour?!


Question: Question about cake flour!?
I am making a cake that calls for 1 3/4 C cake flour!. My store does not sell cake flour, but I know for every 1 C of cake flour you need, you can subtract 2 T all purpose and add in 2 T of cornstarch!. My question is this: Since I need 1 3/4 C total and 3/4 C is not exactly one cup, would I still subtract 2 T from that amount (3/4 C) as well as from the other 1 C of flour, meaning that I need 1!.5 C all purpose and 1/4 C cornstarch!. Or, should I just subtract 2 T from the full one cup all purpose, add in 2 T cornstarch, and use 3/4 C all purpose to complete the total amount I need!? Would subtracting 2 T from the remaining 3/4 C all purpose, and subbing in 2 T of cornstarch there, really affect the texture of the cake or not!. I wouldn't think so, but I'm not sure!. Take 2 cups of all purpose flour!.!.!. sift it!.!.!.!. of the sifted amount, use 1 3/4cups!.

Cake flour is finer than all purpose!. If you sift all purpose you'll get close to cake flour texture!.

I hear people say to use regular all purpose flour and remove 2T!.!.!. but in my experience that doesn't give you the fine texture of cake flour that results in a "lighter" more fluffy cake!.

Cake flour comes in little boxes!. Did you look at the boxes!? SwansDown is one of the brand names!.

You don't need to change anything in the recipe especially adding the cornstarch!. That would make the cake too heavy!. I don't even decrease the amount of flour when the recipe calls for cake flour!.

The texture of the cake won't be as fine as with cake flour, but that doesn't matter too much so long as you don't use bread flour to make the cakes!!Www@FoodAQ@Com

Just take 3 tbsp!. of flour out of the measuring cup!. It doesn't have to be an exact science and 3 tbsp!. is close enough!. It won't make any noticeable difference!.Www@FoodAQ@Com

You would need 3 1/2 Tbs of cornstarch, and reduce the flour by 3 1/2 Tbs!.

You don't need to use cornstarch!. They make all-purpose flour!. You can use that in any type of cooking/baking!.Www@FoodAQ@Com
