I've made it for about 30 yrs, and London Broil is the best!. I slice it very thin (across the grain) and put it in a zip-lock baggie with alot of marinade!. Overnight is the best (or even 24 hrs)- remember that you want it to have more flavor than you would if you were grilling it:) !.!.!. It might take a day or more to dehydrate, but keep checking it!. My dehydrator is OLD and might not be as efficient as yours:) !.!.!.!.!.Www@FoodAQ@Com

I buy a seasoning mix from American Harvest at Walmart and use it to season ground beef!. You can order cookbooks, and a variety pack of seasonings, too, from them!. The same company makes a line of dehydrators and a press (kind of like a cookie press) to extrude the seasoned meat in several different shapes!. By using this, we can skip the refrigerated marinating and go right to squeezing the meat onto the trays!. This makes it the texture of Slim Jims and is easier to eat!. I add teriyaki sauce to the meat along with the seasonings, and have added pizza seasoning, and Mexician spices, too!. Having recently had a tooth break (but not on jerky!), I'm more in favor of the ground beef version! Plus, I always have sore teeth when I eat the kind of jerky made from sliced meat!.Www@FoodAQ@Com

Remove fat from meat and place [meat] in freezer!. When semi-frozen, it is easily cut into 3/8- or 1/4-inch strips (the thinner the slices, the faster the drying)!. Note: meat cut with grain will be chewy, against grain, tender!.

Combine everything in large bowl!. Marinate meat 1 hour with sauce in refrigerator!.Www@FoodAQ@Com

your best bet is to have the butcher cut it into thin strips!.!.!.
I like using teriyaki sauce and let it marinade several hours (4) or over night!.Www@FoodAQ@Com
