Mushroom recipes?!


Question: Mushroom recipes!?
I frickin love mushrooms!. Sauteed, stuffed, with steak, on burgers, every way you can imagine!. Anyone know of some great mushroom recipes!?Www@FoodAQ@Com


Answers:
A simple asian way is to saute it in ginger oil!. add some chicken bouillon and sou sauce!.

A Russian way of doing it is to saute in oil!. add some salt!. remove from heat and add sour cream and chopped cilantro!.

Sausage Stuffed Mushrooms

1/4 lb (125 g) maple, honey garlic or your favorite pork sausage
18 large mushroom caps
2 tbsp (25 mL) butter or margarine
2 tbsp (25 mL) finely minced onions
1 clove garlic, very finely minced
1/4 cup (50 mL) dry bread crumbs
2 tbsp (25 mL) dry sherry
1 tbsp (15 mL) chopped fresh parsley
1/2 tsp dried oregano 2 mL
1/8 tsp (0!.5 mL) salt
1/2 cup (125 mL) grated mozzarella cheese

Squeeze Pork sausage out of casings!. Chop mushroom stems finely!.
In a large skillet, over medium heat, melt the butter and saute mushroom caps for 2 to 3 minutes or until slightly golden!. Remove from pan with a slotted spoon and drain, upside down, on paper towels!.
Reduce heat slightly; add sausage and onions to the skillet; saute about 5 minutes, or until the meat loses its pink color!. Remove sausage mixture with a slotted spoon; if necessary, drain excess fat from the pan!. Add the chopped stems and the garlic and saute 2 minutes!.
Remove skillet from heat and add the bread crumbs, sherry, parsley, oregano, sausage-onion mixture and salt; mix well; let cool slightly!. Stir in the mozzarella cheese!. Spoon stuffing mixture into mushroom caps and refrigerate!.
When ready to serve, place stuffed mushrooms on a lightly greased baking sheet; place under a broiler for 2 to 3 minutes or until the cheese is melted!.

ITALIAN STUFFED MUSHROOMS

1 lb hot Italian sausage
1 slice finely chopped onion
1/2 green pepper, finely diced
1/4 tsp garlic powder
1/4 cup dry bread crumbs
dash of pepper
1/4 tsp salt
ca!. 1 1/4 cups spaghetti sauce
40 large mushroom caps
oil
mozzarella cheese

Instructions:

Cook Italian sausage, onion, green pepper, garlic powder, and a
handful of mushroom stems, finely chopped, in a skillet, then drain
fat!. (It's best if you put meat mixture into a food processor with
steel blade at this point to give meat a finer texture!. Just process
for about 5 seconds or less!.) Then add bread crumbs, pepper, salt,
and spaghetti sauce!. Coat mushroom caps with oil!. Fill mushroom caps
with meat mixture!. Cover with foil and bake at 350 about 20 minutes!.
Sprinkle with mozzarella cheese, then broil until cheese is melted and
mushrooms are tender!. (Or loosely cover with wax paper and

Chicken Marsala! It's more about the mushrooms instead of the chicken!
1/8 tsp black pepper
1/4 tsp salt
1/4 C flour
4 chicken breasts, boned, skinless pounded with mallet
3 Tbsp olive oil
3/4 C Marsala wine or any red wine will do!
3/4 C chicken stock, skim fat from top
1/2 lemon fresh lemon juice
2 Cups sliced mushrooms
1 Tbsp fresh parsley, chopped
Mix together pepper, salt, and flour!. Coat chicken with seasoned flour!.
In a heavy-bottomed skillet, heat oil!. Place chicken breasts in skillet and brown on both sides!. Then remove chicken from skillet and set aside!.
To the skillet, add wine and stir until the wine is heated!. Add juice, stock, and mushrooms!. Stir to toss, reduce heat, and cook for about 10 minutes until the sauce is partially reduced!.
Return browned chicken breasts to skillet!. Spoon sauce over the chicken!.
Cover and cook for about 5-10 minutes or until chicken is done!.
Serve sauce over chicken!. Garnish with chopped parsley!. Serve it on mashed potatoes with buttered steamed aspargus or your fovorite veggie!. Over rice is good too!

This is a throw back from my vegetarian days

Mushroom Stroganoff
3 T butter
1 onion, diced
1 lb sliced mushrooms
1 1/2 C broth( I used veggie broth!.!.!.but beef is good to)
1 1/2 C sour cream

Heat butter in pan and add onions cook until slightly brown!.!.!.add mushrooms until they are limp and give off juice!.
add broth and turn up the heat and let them reduce a bit!.!.!.remove from heat and stir in sour cream!.!.!.serve over noodles!.!.!.!.Www@FoodAQ@Com
