Pancake help?!


Question: Pancake help!?
how do i make my pancakes fluffier inside!?
every time i make them the outsides are perfect but inside they are all dence and not fluffy what do i do!?Www@FoodAQ@Com

Homemade is better!. There is video at the bottom, the lady shows you from beginning to end!. Only use my personal recipe as follows!.
1egg
1 cup buttermilk or regular milk (substitute buttermilk- stir in 1 tsp of vinegar to 1 cup of milk let it sit for 5 minutes)
1 tsp baking soda
1 cup flour
1 Tbsp sugar
1 Tbsp oil
1 1/2 tsp baking powder
1/2 salt
Beat eggs, buttermilk & soda!. Add flour, sugar, oil, baking powder, and soda!. salt, Stir till blended!. NOT BEATEN!!!
Have your griddle med hot lightly oiled or spray with Pam!. Pour a soup ladle full on the griddle!. Mine holds 3 mediums or 4 smalls at one time!. reduce heat a bit!. When holes form on top gently flip!. Cook a few minutes more till soft firm & brown!. Remove to plate, add butter or margarine while hot!. If you want pecans or chocolate chips or blueberry etc!. put them on wet batter right after you pour it on the griddle so they will sink in the batter!. Peanut butter & bananas are my favorite!. That goes on after they are done!

You might be mixing the batter too much!. You should just mix the water in until the batter is just starting to get smooth!. It's OK if there are still some lumps in the batter! When you over mix pancakes, muffins, quick breads, etc!., you cause gluten chains to form, and that makes them tough and dense and chewy instead of light and fluffy!. Mix till moist; may still have lumps in the batter; that is OK!. BTW, I use Krusteaz mix!.

Cook pancake till it bubbles on top, turn it over; only once and then cook till done!. Will keep its fluffiness!.Www@FoodAQ@Com

When using pancake mix the amount of water you add is the key!. You are very close to using the right amount!. Try adding just a little bit (teaspoon) more to the mix!. Make one cake, then adjust you water/powder!.Www@FoodAQ@Com

instead of adding water, add milk!. the same amount!.

also try a tiny bit of vanilla extract (less than a teaspoon) and a little bit of sugar (about a tablespoon)!. thats what my mom does!.Www@FoodAQ@Com

Use club soda instead of water and let it sit for ten minutes before you cook it!.Www@FoodAQ@Com
