Decadent Brownies

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
1 tablespoon instant coffee powder
2 tablespoons real vanilla extract
2? cups sugar
1? cups flour, divided- 1 cup for batter, ? cup in walnuts
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces (pecans ok, too)
? cup peanut butter, optional

Preheat oven to 350o F!. Grease and flour a 13x18x1?” sheet pan!. Melt together the butter, 1 pound chocolate chips, and bitter chocolate on top of a double boiler!. Cool slightly!. Stir together the eggs, instant coffee, vanilla and sugar!. Stir in the warm chocolate mixture and cool to room temperature!.

Stir together 1 cup of the flour, baking powder and salt!. Add to cooled chocolate mixture!. Toss the walnuts with 1/4 cup flour to coat!. Then add to the chocolate batter!. Pour into prepared pan!.

OPTION: To make Peanut Butter Swirl brownies, use ? cup of peanut butter and add in dollops across chocolate batter!. Use a knife to swirl PNB through batter!.

Bake for about 30 min, or until tester just comes out clean!. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough!. Do not overbake! Cool thoroughly, refrigerate well and cut into squares!.

Cake Mix Brownies

1 box chocolate cake mix
3 eggs
1/4 water
1/4 cup oil
1 12 oz bag semi sweet chocolate chips
1 can sweetened condensed milk!.

In a large bowl, mix the 1st 4 ingredients by hand till blended!. Set aside!. In a saucepan, or microwave, melt the chocolate chips, add sweetened condensed milk and stir till completely blended!. Add to cake mixture, mix by hand till well blended!. Pour in 9x13 pan that has been sprayed by cooking spray!. Bake at 350 for 40-45 minutes!. Let cool, cut into squares!.

You might want to add chips, nuts, or use yellow cake mix, and white chocolate chips to make blondies!.Www@FoodAQ@Com

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
11/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Preheat the oven to 300 degrees F!. Butter and flour an 8-inch square pan!.
In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow!. Add both sugars!. Add remaining ingredients, and mix to combine!.
Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes!. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean!. When it's done, remove to a rack to cool!. I have the best brownie recipe ever!

Everyone loved it!. It makes about 12 - 16 chocolate brownies and my secret tip is to take them out a few minuets before they are ready so they are dark brown inside and are really soft and they melt in your mounth!


300g chocolate broken into pieces

250g unsalted butter, cut into pieces

3 large eggs

250g sugar

85g plain flour

1 tsp baking powder

Preheat the oven to 160oc/Gas 3/fan oven 140oc!. Butter and line the base of a shallow 23cm/9in square cake tin!. Melt the chocolate and butter together, then stir well and cool!.

Whisk the eggs until pale, then whisk in the sugar until thick and glossy and well combined!. Gently fold in the melted chocolate mixture, then sift in the flour and baking powder and gently stir until smooth!.

Pour into the prepared cake tin and bake for 30-35 minutes, or until firm to the touch!. Test by inserting a wooden cocktail stick into the middle – there should be a few moist crumbs sticking to it!. The mixture will still be soft in the centre, but will firm up on cooling!.

Cool in the tin on a wire rack for at least 1 hour, then cut into 16 squares and finish cooling on the rack!.Www@FoodAQ@Com

Wrote this down and have used it since then!. INGREDIENTS:
6 tablespoons butter
2 ounces unsweetened chocolate

Frosting:
Melt butter in a saucepan over low heat; stir in cocoa until smooth!. Sift confectioners' sugar; add to the cocoa mixture along with vanilla and enough hot milk or half-and-half to make the mixture soft and spreadable!. Spoon evenly over brownies and spread to cover thoroughly!.


Frosted Mint Brownies

INGREDIENTS:
1/2 cup butter
1 cup sugar
1 teaspoon vanilla
2 eggs
2 ounces unsweetened chocolate, melted (2 squares)
1/2 cup all-purpose flour, sift before measuring
1/2 cup chopped walnuts or pecans
Mint Frosting, below

PREPARATION:
Thoroughly cream butter, sugar, and vanilla; beat in eggs then blend in melted chocolate!. Stir in the flour and chopped walnuts or pecans!. Turn batter into a greased and floured 8-inch square pan!. Bake at 325° for 30 to 35 minutes!.
Frost with mint frosting!.
Mint Frosting

3 tablespoons butter, softened
1/2 teaspoon peppermint extract
dash salt
2 cups sifted confectioners' sugar
2 tablespoons milk or cream
few drops red food coloring
Cream butter, peppermint, and salt; gradually add 1 cup confectioners' sugar, creaming until light!. Add remaining confectioners' sugar and the milk!. Beat until smooth!. Add a few drops of food coloring to tint pink!. Frost cooled brownies!.

PREPARATION:

In a large bowl, combine cocoa and baking soda; blend in 1/3 cup melted butter!. Add boiling water; stir until well blended!. Stir in sugar, beaten eggs and remaining 1/3 cup butter!.
