MIXED BERRIES with VANILLA BEAN SYRUP
Ingredients
? vanilla bean
? cup granulated sugar
? cup water
1 pint fresh raspberries
1 pint fresh blueberries
1 pint fresh blackberries
? pint fresh strawberries
Directions
Split the vanilla bean in half lengthwise with a sharp paring knife and scrape out the seeds with the back of the knife; save the empty pod for a garnish, if you like!. Put the seeds in a small saucepan, along with the sugar and water!. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves!. Reduce the heat to low and cook for 7 minutes to let the vanilla infuse!. Strain through a fine sieve to remove any fibrous pieces of vanilla pod or clumps of seeds!. Let cool and refrigerate until completely chilled!.
Rinse the raspberries, blueberries, and blackberries and spread them in a single layer on a towel to dry!. Hull the strawberries and cut them into quarters!.
Just before serving, combine all the berries in a large serving bowl and pour on just enough of the vanilla syrup to lightly coat them, about 3 tablespoons!. Toss gently!.Www@FoodAQ@Com

No sugar OR flour Peanut Butter Cookies
There's no sugar OR flour in these cookies!. The peanut butter, Splenda and egg stiffen the dough, which also has vanilla, cinnamon and nutmeg for flavor!.
Ingredients:
1 cup Skippy peanut butter
1 cup Splenda (sugar substitute)
1 egg or 1/4 cup egg substitute
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
Preheat oven to 350 degrees!. Combine all of the ingredients!. Using a small spoon, drop cookie dough onto an ungreased cookie!. Press each ball of dough with a fork to flatten it into a cookie shape about 1/3 inch thick!. Bake for 8 to 10 minutes!.
Notes: Baking time may vary upon oven!. You can substitute almond or cashew butter, if you'd prefer (but peanut, I think tastes best)!.
Number of servings: about 1 dozen

2 tablespoons low-fat yogurt (try key-lime or lemon)
Juice of 1/2 lime (about 1 tablespoon)
1 tablespoon fresh mint leaves, torn
1 cup cubed cantaloupe
4 medium strawberries, stemmed and quartered
1/4 cup raspberries
1/4 cup blueberries
Whisk the yogurt, lime juice, and mint together in a medium bowl!. Add the fruit and toss to combine!. Serve!.Www@FoodAQ@Com

(serves 4-5 people)
Cooking Instructions
For the SWEET RICE:
2 Cups of "Sweet Rice" or glutinous rice
1 Cup of Sugar
? Can (13!.5 Fl!. oz!.) Coconut Milk
2 Ripe Mangos
Ingredients for Cream Sauce (topping)
? Can (13!.5 Fl!. oz!.) Coconut Milk
1 Tablespoon of Sugar
? Tsp!.!. Salt
? Tsp!. of cornstarch
Rinse the rice!. Soak it in water for 30 minutes!.
Drain some of the water, leave 1/4 inch of water remaining on top of rice!.
Cover container and microwave on high for 10 minutes
(Note: Cooking times may vary!. High by our standards means that it takes approximately 3 minutes to boil a cup of water!. Adjust your cooking time accordingly)!.
Mix rice after 10 minutes and return to microwave for an additional 4 minutes!.
Mix sugar and 1/2 can coconut milk and stir until sugar dissolves!. Pour this sauce over the rice and coat completely!.
Cover, and let stand for 20 minutes and serve at room temperature!.
Slice mangos into bite size pieces and serve with sweet rice!.
