How do you make egg rolls crispy?!


Question: How do you make egg rolls crispy!?
My mom makes egg rolls and they come out soft!. Why is it that in chinese resteraunts they come out crispy!?!? Is there a technique or a recipe!?!?!?!?

Use a deep fryer or make sure that you completely submerge the egg roll to assure both sides cooking evenly!. Cooking them too long on one side can cause them to become soggy!. also, use PEANUT OIL instead of vegetable oil!.Www@FoodAQ@Com

Deep fat frying on a high heat, that's how they do it, and letting them rest on a cooling rack so their bottoms don't get soggy with steam!.Www@FoodAQ@Com

the secret is to deep fry them in CLEAN cooking oil!. make sure you haven't used the grease before!. then drain them on paper towels once they are done!.Www@FoodAQ@Com
