Healthy AND Delicious Pancake recipe ?!
I'm looking for a healthy, delicious, and prefferably simple pancake recipe!
Yes i know there are thousands out there, but that's the problem!. I want to know what you personally love!. I have yet to find a "healthy pancake" to my complete and total liking!.

This is a recipe for hearty whole wheat pancakes!. They're incredibly delicious, and healthy! It'll yield about 12 pancakes =) (feel free to leave out the walnuts or raisins if you don't like them)
1 cup whole wheat flour
1/4 cup all-purpose flour
1/3 cup uncooked Cream of Wheat
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups vanilla soy milk
1/4 cup applesauce
1 large egg, lightly beaten
Cooking spray
1/2 cup golden raisins, divided
1/2 cup coarsely chopped walnuts, divided
1/4 cup maple syrup
Lightly spoon the flours into dry measuring cups; level with a knife!. Combine flours, Cream of Wheat, and next 4 ingredients (through salt) in a large bowl, stirring with a whisk!. Combine milk, applesauce, and egg in a medium bowl, stirring until well blended!. Add milk mixture to flour mixture, stirring until well combined!. Let batter stand 5 minutes!.
Heat a nonstick griddle or skillet over medium heat; coat pan with cooking spray!. Pour about 1/4 cup batter per pancake onto pan; sprinkle each with 2 teaspoons raisins and 2 teaspoons walnuts!. Cook 1 minute or until tops are covered with bubbles and edges look cooked!. Carefully turn pancakes over, and cook 1 minute or until bottoms are lightly browned!. Repeat procedure with remaining batter, raisins, and walnuts!. Serve with syrup!.

"Instant" Pancake Mix
6 cups all-purpose flour
1 1/2 teaspoons baking soda (check expiration date first)
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar
Combine all of the ingredients in a lidded container!. Shake to mix!.
Use the mix within 3 months!.
"INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desired
Heat an electric griddle or frying pan to 350 degrees F!. Heat oven to 200 degrees F!.
Whisk together the egg whites and the buttermilk in a small bowl!. In another bowl, whisk the egg yolks with the melted butter!.
Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined!. Pour the liquid ingredients on top of the pancake mix!. Using a whisk, mix the batter just enough to bring it together!. Don't try to work all the lumps out!.
Check to see that the griddle is hot by placing a few drops of water onto to the griddle!. The griddle is ready if the water dances across the surface!.
Lightly butter the griddle!. Wipe off thoroughly with a paper towel!. (No butter should be visible!.)
Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired!. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes!. Continue to cook 2 to 3 minutes or until the pancake is set!.
Serve immediately or remove to a towel-lined baking sheet and cover with a towel!. Hold in a warm place for 20 to 30 minutes!.

1 tablespoon extra virgin olive oil
1 egg or 2 egg white
1 teaspoon vanilla extract
SYRUP
1 cup strawberry (fresh or frozen, can use blueberry, raspberry etc!.)
1 tablespoon pure honey
Directions
Pancakes:
Combine oat flour, whole wheat flour and baking powder in large bowl, mix and set aside!.
In blender combine milk, honey, lemon juice, olive oil, egg and vanilla until completely blended (make sure the honey has not fallen to the bottom) pour into bowl containing the flour mixture and mix well!.
On heated griddle or pan, pour enough pancake mix to create your desired size of pancake!.
Cook one first side 20 to 30 seconds then flip over and cook about 10 seconds longer, remove from pan and repeat until mix is used up!.
Syrup:
Combine berries in small sauce pan (if frozen thaw in microwave) with honey and heat on medium heat until starting to bubble!.
Pour into blender and blend until completely mixed!.
Put pancakes on plate and serve with Berry syrup!.
TIPS: Make your own Oat flour to save cost!. Pour Quaker rolled oats into a blender and blend until all is a powder!. Buy whole wheat flour that has NOT been bleached!.

Homemade is better!. There is video at the bottom, the lady shows you from beginning to end!. Only use my personal recipe as follows!.

1 cup buttermilk or regular milk (substitute buttermilk- stir in 1 tsp of vinegar to 1 cup of milk let it sit for 5 minutes)
1 tsp baking soda
1 cup flour
1 Tbsp sugar
1 Tbsp oil
1 1/2 tsp baking powder
1/2 salt
Beat eggs, buttermilk & soda!. Add flour, sugar, oil, baking powder, and soda!. salt, Stir till blended!. NOT BEATEN!!!
Have your griddle med hot lightly oiled or spray with Pam!. Pour a soup ladle full on the griddle!. Mine holds 3 mediums or 4 smalls at one time!. reduce heat a bit!. When holes form on top gently flip!. Cook a few minutes more till soft firm & brown!. Remove to plate, add butter or margarine while hot!. This is going to make 10 to 12 samll pancakes or aprox 8 to 9 med!. pancakes!.
If you want pecans or chocolate chips or blueberry etc!. put them on top of the wet batter right after you pour it on the griddle so they will sink in the batter!. Peanut butter & bananas are my favorite!. That goes on after they are done!
