Like the red peppers!? I mean you normally don't "cook" them however because they are sweet you can use them in salads and a side with mozzarella and olives!.
The way they make those "fillings" for those manzanilla olives is they burn the outer skin of the peppers by roasting them in the oven til the are black!. Then once cool enough for touch take them out and under water peel of that skin!. Drip off and cut up and slice them small or in long peels and add olive oil and balsamic vinegar and some pepper and you've got a little snack!.
Otherwise you can stuff them i can imagine with rice thats been cooked in a tomato sauce!.and bake them in the ovenWww@FoodAQ@Com

if you've got heaps, you should be able to freeze some of them in a ziplock bag too, so you can keep adding them to your cooking!. I keep a bunch of different types of chillis in the freezer, that way I can grab a couple when needed; they start to unfreeze really quickly and are easy to chop up still semi-frozen, and add to your cooking for flavour!.Www@FoodAQ@Com
i would grill them and remove the skins!. so may uses!.
