My recipe probably is nowhere near authentic Indian, but it tastes great and that's all that counts!

In about 1!.5 Tbsp olive oil, saute some minced garlic and minced ginger until fragrant!. Add 1 cup (I don't wash mine) of basmati and stir until well-coated and a bit translucent!. Then add 1 Tbsp of curry powder, stir well until a bit fragrant!. Then add 2 cups chicken broth, stir well, bring to boiling then put a lid on it, bring to a simmer and time for 20 minutes!. At the 10 minute mark, stir in some frozen peas and some baby shrimp!. When it's done, stir in some chopped green onions and chopped cilantro!.

The first url gives you the basics of how to cook rice perfectly but that site has a lot of rice recipes too!. Whenever I think of an Indian rice dish I always think of Biriyani so the second url will take you to a good vegetable Biriyani recipe (there are chicken biriyani ones available here too)!.
The third url is a list of 25 rice recipes for you to choose from but I wouldn't be surprised if you found the rest of the site interesting too as it deals purely with Indian recipes!.Www@FoodAQ@Com

Take 2 cups of basmati rice wet in water and keep it for 30 minutes, rinse in a cloth, put in a pressure cooker, add 4 cups of water, close the cooker, put on the oven after getting full steam seam the oven after one minute off the flame!.Take out the cooker from the oven and cool it naturally!. open the cooker boiled rice is ready,Www@FoodAQ@Com

This is one of my favorite recipes!.
Ingredients :

Mutton (boneless lamb pieces) : 500 Gms

Basmati Rice : 500 Gms

Saffron (Optional) : a pinch

Onions – 150-20 Gms

Oil or Fat – 150 Gms

For The Marinade :

Curd : 200 Gms

Mace Powder : a pinch

Nutmeg Powder a pinch

Green Cardamom Powder : a pinch

Garam Masala Powder : ? tsp

Whole Black cardamom(1 no), Whole Green Cardamom ( 2-3no), Cinnamon, Cloves(3 no), Black Peppercorens (8 no)

Ginger Garlic Paste : 1 Tbsp

Red Chilli Powder : 1 tsp

Salt : To Taste

Method :

Soak the basmati rice in water for half an hour & then drain it!. Prepare the marinade by mixing the ingredients and then marinate the lamb pieces for about ? an hour!. Soak the saffron in a 2 Tbsp of warm water!.

Finely slice the onions and deep fry them till golden brown and remove!.

In a heavy bottomed degchi (casserole), add the marinated lamb along with the marinade!.

Then cover this with the drained rice!. Do not mix the rice and lamb!. Then cover the pan and cook on low heat for 1 to 1 ? hours!. When the rice is three-fourths cooked (This will take about 45 minutes to 1 hour), open the lid and sprinkle the saffron water on the rice!. Then let it cook till done!. Serve hot, garnished with fried onions!.

You can put this in an oven proof casserole and cook the biryani in the oven for about 1 hour!.

You wash it & keep it in water for two hrs!. You add some lemon juice and one spoon ghee & boil in cooker!. You wait for two wistle!. It is ready to serve!.Www@FoodAQ@Com
