Whats the best way to cook lamb neck fillets please?!

I like them for Lanchashire Hotpot, but they make an excellent stew or curry, just be careful ot over cook them or they get stringy, here in Canada I use a shoulder of lamb, boned out for my stews and currys, and my local supermarket/shop does a few whole ones and I get the bigger pieces of trim!.

Lightly fry/brown them in a pan, then transfer to a casserole dish- use the juices to lightly fry an onion, -use one of your own casserole recipes!. (You could add some tinned tomatoes, a splash of Worcestershire sauce and an oxo and some mixed herbs)!.

trim all the fat from the fillets, fry until brown all round, then into a hot oven, 10Min's, for medium, longer for well done, depending on your taste!. leave to rest fro 5 Min's!.
