Question: What to do with a can a sardines!?!?!?!?
~ I really like sardines,,,but is there any recipies or other ways to serve sardines besides right out of the can!?!?!?!?Www@FoodAQ@Com

1/2 cup finely chopped flat-leaf parsley

Preparation
Place a large pot of water over high heat and bring up to a boil!. Once boiling, add some salt and then the pasta!. Cook to al dente according to package directions!. Right before draining, remove and reserve 1 cup of the pasta cooking water!.

Place a large skillet over medium-high heat, and add the EVOO!. Add anchovies, garlic, and pepper flakes, if you'?re using them!. Break up anchovies with a wooden spoon until they melt into the oil and garlic mixture!.

Add reserved pasta water to the skillet, then the spaghetti, parsley, lots of pepper and a little salt to taste!. Toss together and cook for 1 more minute so that the pasta has a chance to soak up some of the sauce!. Serve with chunks of crusty bread for mopping up the excess goodness!.

Pasta with Sardines

1 (16 ounce) package spaghetti
3/4 cup olive oil, divided
6 cloves garlic, minced
2 (4 ounce) cans sardines packed in olive oil, drained
1 cup seasoned bread crumbs
1/3 cup freshly grated Parmesan cheese
1/4 cup chopped fresh parsley
1 teaspoon ground black pepper
additional Parmesan cheese for serving (optional)

Bring a large pot of lightly salted water to a boil!. Add the spaghetti, and cook until al dente, or 8 to 10 minutes!. Drain, and rinse under cold water!. Toss with 1/4 cup olive oil, cover and keep warm!.
Place another 1/4 cup olive oil in a skillet, and heat over medium heat!. Stir in the garlic, and cook just until golden, 2 to 3 minutes!. Add the sardines, and cook 1 minute more!. Stir in the bread crumbs and 1/3 cup Parmesan cheese!. If necessary to give the mixture a crumbly texture, stir in the remaining 1/4 cup of olive oil!. Stir in the parsley and pepper, and remove from the heat!. If desired, serve with additional Parmesan cheese!.

I am a former chef and like them on pasta with a light tomato sauce, loads of garlic and toasted breadcrumbs, it is a Sicilian dish I learned working in hotels and can be done with small or medium size sardines, preferably in oil or water, tomato sauce is fine, even add an anchovy or 2 when cooking the onions and garlic in good but not virgin olive oil, they melt and you know nothing of them being there but they lend a bit of earthiness, add canned chopped or broken tomatos (a bit of tomato paste or plain sauce is fine with the tomatos), simmer for 30 minutes, cook some nice long pasta like lingini or my fav bucatoni, dress the cooked pasta with the sauce, sprinkle the toasted breadcrumbs you can saute them in olive oil too, fresh parsley and then break but not to small the sardines on top, and serve, you will be pleasantly surprised how good this is!.Www@FoodAQ@Com

Moroccan Sardine Salad
Makes 1-2 Servings

Ingredients:

1 can sardines in oil (do not drain)
3 Tbsp pitted Kalamata olives, roughly chopped
? cup flat-leaf parsley, chopped
1 small onion (red or white), chopped
1 small tomato, chopped
4 Tbsp fresh lemon juice
? tsp salt
2 tsp sumac


Directions:

Combine Mashed sardines, with a pinch of salt, a squeeze or two of lemon, and cracked black pepper!.
Spread onto toasted bread!. Top with diced tomato, (less seeds) and grated cheese!.

chop the sardines up, add some finely minced onion, cucumber/pickles and mayo and spread on crackersWww@FoodAQ@Com

press onto 2 slices of toast put under grill for 3-4 mins sprinkle with vinigar and pepper YUM!!Www@FoodAQ@Com
