im doing a project in English class and i need to make a bolivian recipe and i dont know any can any one give me a recipe i can bring into class and not have to refrigerate!.Www@FoodAQ@Com

Bolivian Corn Chowder
38 min | 10 min prep | SERVES 6

Ingredients
2 tablespoons olive oil
1 onion, finely diced
2 medium potato, peeled and shredded
1 (17 ounce) can corn
1 (17 ounce) can creamed corn
1 (16 ounce) can chicken broth
1 (4 ounce) can diced chile
1/2 teaspoon chipotle chile in adobo
4 garlic clove, minced
1/2 teaspoon oregano
1/2 teaspoon cumin
1 cup half-and-half
1/2 teaspoon salt
2 lime

Directions
1In a large saucepan, heat olive oil over medium heat!. Add onion and cook, stirring occasionally until softened, about 3 minutes!.
2Add shredded potatoes, both cans of corn and the chicken broth!. Reduce heat to medium-low!. Cover and cook for 15 minutes!.
3Add diced green chilies (don’t drain), chipotle sauce, garlic, oregano and cumin!. Continue cooking, covered, for 10 minutes!.
4Shortly before serving time, add the half-and-half and salt!. With a sharp knife, cut half a lime in very thin slices and float on top of the soup!. Cut remaining lime into quarters and serve on the side

Spicy Bolivian Chicken

Ingredients
1 1/2 lbs boneless skinless chicken breast, cut into 1/2-inch strips
salt & freshly ground black pepper
2 tablespoons vegetable oil
2 large onion, chopped
2 red bell pepper, cut into 1/4-inch strips
2 garlic clove, fineley chopped
1 teaspoon crushed red pepper flakes
3 cups chicken broth
3/4 cup peanut butter
1 (10 ounce) package frozen peas, thawed
1/4 cup breadcrumbs


Directions
1Season chicken with salt and pepper!. In a large frying pan, heat oil over medium heat!. Add chicken strips and sauté, stirring, for 3 minutes, until chicken turns opaque!. Remove chicken and set aside!.
2Add onions, bell peppers, and garlic to pan!. Sauté 3 minutes, until onions are tender!. Stir in hot pepper!. Add broth and peanut butter!. Simmer, stirring occasionally, for 10 minutes!.
3Stir in chicken, peas, and bread crumbs!. Cook 5 to 10 minutes, stirring occasionally, until sauce is thickened and mixture is heated through!. Serve over riceWww@FoodAQ@Com
