I like simple!.

SWISS STEAK

2 to 2 1/2 beef round steak, cut 1/2 to 3/4 inch thick
1/4 cup all purpose flour
1 tsp salt
1/4 tsp pepper
1 to 2 tbsp oil
1 large onion, sliced
1 (8 oz) can (1 cup) tomatoes, undrained, cut up
1 (8 oz) can (1 cup) tomato sauce

Cut meat into serving pieces!.

In small bowl, combine flour, salt and pepper!. Coat meat with seasoned flour (use all the flour) In large skillet, brown meat in hot oil!. Add remaining ingredients!.

Cover, simmer 1 1/4 to 1 1/2 hours or until meat is tender!.

Serve with potatoes or noodles!. 6 servings!.

TIPS:
If desired, substitude one (10 1/2 oz) can condensed tomato soup and 1/2 cup water for tomatoes and tomato sauce!.

Vegetables such as peas, beans or mushrooms can be added to swiss steak!. Add peas and beans toward end of cooking; add mushrooms with onion!.

Red potatoes would be good with this!.

Roasted Red Potatoes

4 large Red Potatoes
1/4 tsp Fresh garlic
1 tbsp Olive oil

1/4 tsp Parsley

Scrub potatoes, don't peel!. Slice potatoes into bite size pieces!. Add the oil, and garlic!. Shake until all the potatoes wedges are well covered!. Place on a baking sheet in a 375 degree oven for 40 minutes!. Sprinkle a little dried or fresh parsley on the potatoes before serving!.


Onion Parmesan Roasted Red Potatoes

2 lbs red potatoes, sliced 1/2 inch thick
1/3 cup vegetable oil
1 envelope dry onion soup mix
grated parmesan cheese
pepper

4-6 servings

Combine all ingredients in a large plastic bag, seal and shake until well coated!.

Empty bag into a 13x9 dish, cover and bake at 350 degrees for 35 minutes, stirring occasionally!.

Uncover and bake 15 minutes longer or until potatoes are tender!.

Note: *I think they even taste better more browned and crispy, so you may want to turn up the temp after uncovering and cook them longer!.

You could also make this on the grill, covered in foil in a pan!.Www@FoodAQ@Com

Well, I'm a good ole southern girl so I assume by swiss steak you mean the type with a mushroom/onion gravy!. I serve on a bed of homemade mashed potatos, then sides of baby peas & honey glazed carrots!. A good yeast roll is a must to mop up all that yummy gravy!.!.!.!.!.!.Enjoy!


Sorry - I've never heard of swiss steak with peppers & tomatos lol!. With those ingredients, a nice steamed white rice & tossed salad would go great!.

Mashed potatoes, of course!. Use the gravy from the swiss steak to put on top!. This is the only way I have ever eaten it or served it!.Www@FoodAQ@Com

Mashed baby red potoatoes with the skins still on, and some fresh green beans!. If you can't find fresh green beans, buy the frozen skinny ones!.Www@FoodAQ@Com
