pounds Potatoes
1 quart Vegetable Oil
Salt

Thinly slice potatoes using the slicer blade in a food processor!. Cover sliced potatoes in cold water and soak 1 hour!. Drain and dry thoroughly!. Heat oil in a 5 quart pot over medium heat to 375 F!. Fry potatoes in small batches until golden!. Drain on paper towels and salt, if desired!. Serve immediately!.

Sure!. Slice your potatoes as thin as you can!. A mandoline, if you have one, is good for this!. Soak them in water for about 10 minutes!. Drain and pat dry thouroughl!. Blanche them in low teperature oil (about 300 F) for 6-8 minutes!. Drain well!. Then, deep fry them in hot oil (about 375 F) fir 15-18 minutes, or until golde brown and crispy!. Drain, season (salt, pepper, or whatever you like) and enjoy!
