Homemade caramel question?!


Question: Homemade caramel question!?
I intend on making pecan divinity rolls with the white nougat logs rolled in caramel followed by rolling in pecans!. My concern is if homemade caramel made with sweetened condensed milk will be the same or too runny verses melting brach's caramels down!. also will high humidity today destroy my efforts no matter what!? I've never melted Brachs down, so I don't know how that works!. Homemade caramel is definitely sticker than Brachs!. Doesn't set up hard like Brachs does, but it tastes much nicer and the stickiness would lend itself better to rolling in pecans!. I suggest doing homemade and then refrigerating for a short while to make it firmer before rolling in the pecans!. Bet it'll taste gorgeous!Www@FoodAQ@Com

Well, for me the condensed milk is the easiest!. Just boil the can completely covered in water and 3 hours later you have the best!. and a can will last for many uses!.Www@FoodAQ@Com
