Mexican Roll Ups
This is something I made up its a great way to use left over meat!.

Use one of your choice
Shredded Chicken, shredded beef or shredded pork
Put in skillet with 1 pkg of taco seasoning
Add enough water so that you may simmer it, not to much

After simmering like 20 min
Place small amount in to soft burrito shell, I like to use the large ones!.
Roll them up and secure with toothpicks
In deep fryer or skillet, brown til golden brown
They will be crunchy
Serve with sour cream, salsa or gucamole

Dont forget to remove toothpicks !!!!

Scrambled Noodles
Ingredients: 3 pkg Ramen Noodles ($!.60)
4-6 eggs ($!.25-$!.50)
1 c cooked peas, broccoli, or other leftover veggies ($!.50 maximum)(can also use uncooked summer squash)
1 c cooked chicken or other meat (I use one chicken breast from a package of IQF breast from Aldi's,
could cost as much as $1!.25)

Break up and cook Ramen noodles according to package directions, but do not add seasoning!. When noodles
are done, drain and put into large nonstick skillet!. Scramble eggs and add to skillet with seasoning packet (one is
enough for my family, less salt that way), veggies and meat!. Cook, stirring, until eggs are done!.






Pasta Bake (serves 6 generously)

One 16 oz bag chunky dry pasta (rigatoni, penne, etc)!. ($!.50-1!.00)
One 28 oz jar pasta sauce of your choice (sale, typically $1!.00-1!.50)
Water
1/2 lb package Brown and Serve sausage, crumbled by hand ($1!.25 on sale)
2 cups shredded mozzarella (whole milk works best) ($1!.00)

In a 13 x 9 inch baking pan mix the pasta, sauce, one sauce jar full of water and the sausage!.
Cover tightly with aluminum foil and bake in a 425 degree oven for 30 minutes!. Stir well, recover
and bake 10 minutes!. Remove foil, sprinkle with cheese and bake until cheese melts!.

Great for getting rid of assorted leftovers!. You can add whatever you like to this and it



Tuna Patties: !. I would say they cost about $1!.25 to make the whole batch!. I usually whip them up when I've forgotten to set something out to thaw or am in a hurry!. I also find tuna a great alternative to other fish and meats when money is low!. It's healthy and cheap!

2 cans tuna, drained
1 egg
8 crackers, crushed
1 tsp Worcestershire or soy sauce
dash garlic powder, salt & pepper
Mix all ingredients until combined!. This should be just sturdy enough to make a patty-they will be a bit moist, but not falling apart!. If too wet to hold a patty, add a couple more crackers!. If too dry, add a dash of soy or w!. sauce!. This should make 4-6 patties!. In a large skillet, heat enough oil to cover bottom of pan!. (I don't substitute the oil with cooking spray because it takes the outer crunch away) When oil is hot, place patties in skillet and cook on each side until golden!. Just a couple of minutes on each side!. Drain on paper towels!. You can eat this on a bun like a burger, or just as you would a meat entre'!. I like mine best without the bun with a little ketchup on the side for dipping!. YUMMY!



Pizza Macaroni Style

1 8oz box macaroni

1/4 cup water
1 8oz can tomato sauce

1 1/2 tsp!. garlic salt
1 1/2 tsp!. basil

1 lb!. ground beef
1 1/4 tsp!. oregano

1/2 cup onion
pepperoni

6 oz!. mozzarella cheese

Cook meat and onion until brown!. (I do this in the microwave in a covered dish for 5 minutes!.) Drain!. Add spices and simmer!. Cook macaroni and drain!. Combine meat and macaroni in 9 X 13 Pyrex dish!. Add water and 1/2 of tomato sauce!. Place cheese and pepperoni on mixture!. Add rest of tomato sauce and bake at 375 for 20 minutes!.




Frugal Fathers Tuna chowder

2 cans of tuna (light is fine and less expensive)
1 large onion chopped
1 can of mixed veggies (or frozen or
fresh is you have)
A pinch of sage
a pinch of thynme
pepper to taste
1 can of corn
2 cups milk (any kind you have)
1 can chicken broth

Saute all your veggies in a soup pot
Drain the tuna and save the liquid (use tuna in water only)
add tuna water and broth let simmer
after 10 minutes add tuna corn and milk!. Simmer and other 10 minutes!.

Serve with salad or bread (day old is great form dipping in this soup)



CHEAP BEEF STROGANOFF

2 tbsp!. butter
1/2 c!. diced onions
Garlic
2 tbsp!. flour
2 tbsp!. salt
1 can sliced mushrooms
1/4 tsp!. pepper
1 lb!. ground beef
1 can consomme
1 tbsp!. vinegar
1 (6 oz!.) can tomato paste
1 bag egg noodles
1 pt!. sour cream

In a heavy skillet over medium heat, melt butter, saute onion and garlic until soft!. Sprinkle mixed flour, salt and pepper over meat!. Add meat and mushrooms to skillet and cool!. Stir often for 6 minutes!.
Stir in consomme, vinegar, tomato paste!. Simmer, uncovered for 10 minutes!. Stir often, cook until desired consistency!. Cook noodles for 14 minutes, drain in hot water, return to cooking pan after melting 2 tablespoons butter!. Blend in sour cream just before serving and simmer 2 minutes to heat!. Serve over noodles!.





Cheap Cassorole
1 (8 oz!.) cheese whiz
1/2 c!. milk
7 oz!. spaghetti, break in thirds cook and drain
2 tbsp!.butter
10 oz!. cooked broccoli
1 c!. chopped chicken or turkey
1 (4 oz!.) can mushrooms, drained
2 tbsp!. chopped pimento
1/4 tsp!. salt
1/4 tsp!. sage

Combine cheese and milk mix!. Toss spaghetti with butter!. Combine all ingredients Mix well!. Spoon into 2 quart casserole!. Cover and bake at 350 degrees for 30 to 35 minutes!. Stir well before serving!. This is easy cheap and good!.



Quick and Easy Supper Ideas!

What to do on those nights when the cupboards are almost bare and payday is 2 days away!?

Here are some quick and easy supper ideas that use ingredients you probably always have on hand!.

1!. An old stand-by at our house is simply to have breakfast for supper! Sometimes we have pancakes and sausage!. I make the pancakes from baking mix which is something I always keep handy!. You just add milk!. Other times, it's scrambled eggs, toast and bacon!.

2!. My family enjoys "Little Pizzas" made from English muffins!. Just split English muffins and arrange on a cookie sheet!. Top with tomato sauce and sprinkle with Italian seasoning!. Then just add whatever toppings you have on hand!. Sometimes we add pepperoni slices, sometimes browned ground beef or sausage!. Sprinkle on chopped onions or whatever is your family's favorite!. Top with shredded cheese and put in 375 degree oven till warmed through and cheese is melted!.

English muffins are inexpensive and keep well in the freezer!.

3!. Every now and then we have "Baked Potato Night" at our house!. I bake one large potato for each person and then round up a variety of toppings!. Some things we like are chili, sour cream, broccoli, bacon bits, chopped onions, shredded cheese!. Everyone can fix his own just the way he likes it and it's a meal in itself!.

4!. A very quick supper is grilled cheese sandwiches and vegetableor tomato soup!. It's nutritious, inexpensive, and tasty!. Need I say more!?

5!. Here's a recipe the children can help with!. My children loved these when they were small and they enjoyed being able to help make them!.

Oven Baked Hot Dogs

Lay 8 slices of bread on cookie sheet!. Place a slice of cheese on top of each slice!. Put 1 wiener diagonally on each slice!. Pull corners of bread up over sides of wiener!. Secure with toothpicks!. Brush each "hot dog" with melted butter!. Place in 400 degree oven till browned and cheese is melted!.

6!. Nachos are another super-fast supper idea!. Place a pile of tortilla chips in a microwaveable shallow dish!. Pour chili over top, add shredded cheese and microwave till warm!. Top with sour cream, if desired!.

7!. Sloppy joes are another family pleaser!. I try to keep buns on hand in the freezer!. If you have no buns handy, sloppy joe sandwiches work,too! To go with the sloppy joes, cut potatoes into 4 wedges each!. Place in baking dish with skins down!. Brush with melted butter and sprinkle with seasoned salt!. Bake at 400 degrees for about 45 minutes or until tender!.

8!. If you are ready for something different for supper or lunch, try this recipe for "Pepperoni Pie"!.

In bottom of 9-inch pie plate, combine an 8-oz!. package of shredded mozarella cheese, and about 1/2 cup of diced pepperoni!. In a medium bowl, beat 5 eggs and 3/4 cup milk until well-blended!. Pour over mixture in pie plate!. Bake for 25 minutes or until knife inserted in center comes out clean!. Add a salad and some bread and you have a delicious, light meal!.

9!. I always try to keep ground beef in the freezer in one-pound packages!. Here is one of my staple recipes using ground beef!.

Western Casserole

Brown a pound of ground beef!. Drain off fat!. Add 1 can of chili beans and 1 can of Spanish rice!. Stir over medium heat until warm!. Pour into microwaveable serving dish and top with shredded cheese!. Heat in microwave until cheese is melted!.

Easy, easy, and inexpensive, too!.

10!. Lastly, something we do at our house every couple of weeks is have "Leftover Night"!. Seems like almost every night, there is just a little bit of supper left over!. Just enough for maybe one person!. I put these servings in freezer containers and store till I have several different bits of main dishes!. Then I get them all out and everyone has their choice of what they have for supper! I usually add salad and make hot rolls and everyone is happy!

try pasta y faggioli (pasta and beans)!. A cheep and healthy Italian classic!. Olive oil, garlic, hot pepper, celery chopped (with leaves chopped), beans, and a splash of the pasta water (tomatoes optional)!. Mix this back in the pot with the drained pasta and serve!. If you dont have parm' throw on pan toasted and salted breadcrumbs, its a Sicilian trick and it works great!. Its about $2 for 4 servings!.

Use penne or shells for pasta!.

Others: Omlet or fritata for dinner!.
Boil a chicken with one onion, 2 carrots, 2 celery, thyme, salt and pepper for one hour!. Drain liquid into other pot, eat or toss the veg!. You get tasty chicken meat for a week, and broth for 4 servings of soup!. Make sure you use the chicken neck, and internals, you can use them chopped to make dirty rice with some chopped onion and green bell pepper!.

When I am on strict budget I buy the following:

Rice, pasta, noodles, frozen vege (hunt around see whats on special), ground beef!. corned beef, potatoes, fish, cabbage!.

With those foods you can make multiple meals!.

Bread, milk, butter, eggs and cereal are necessary too!.

I love searching for recipes that are cost effective and tasty!. Anything that freezes well or can be made into lunches the next day!.

Cook a big chunk of Corned Beef or Silverside!.
Use the leftovers for sammies, have cold with spuds and veggies!. Shred and add to hash browns!.

Select seasonable veggies, Half a decent sized cabbage will last for a couple of weeks in the fridge!. (wrap tightly in a plastic supermarket bag!. Only cut off what you need and trim of the edges as the start to turn black!.

I have two young children as well ages 5 and 4!. Here are a few of the simple, but cheap meals they will eat!. Black beans with rice and corn bread (my 5yr old really loves it)!. Speghetti and bread (4 yr old loves this one best)!. I will also bake a chicken and just serve it with veggies!. Grilled cheese with soup!. We also will do a 'breakfast' night!.
