Answers:
After it looks done and isn't place a piece of wax paper or foil lightly over the top and that will protect it from browning anymore!.

It sounds like your oven is in need of some serious calibration or there is something a miss in your recipe!.Www@FoodAQ@Com

If you have a fan oven they always cook quicker the regular ovens!. You could cover the top of the cake with baking parchment!. Are you using the correct size cake tins!? I used to have the same problem then I found this recipe,it cooks quickly so far has always been successful!.

1& 1/4 cups of s r flour
1 tsp baking powder
1 cup sugar
little pinch salt
for chocolate cake add 2tblsp cocoa
1/2 cup milk
1/2 cup sunflower oil
2 eggs

Mix all dry ingredients together
Mix all wet ingredients together

Combine both and put into 2 8' cake tins
Bake for 20/25 mins at 180

Turn out after 5 mins to cool!.

Ice as desired!.

Chocolate fondant for top and middle
2/3 cup thick cream
260 grammes of 50/60% chocolate!. not cooking chocolate or plain chocolate!.

Warm cream remove from heat and add broken choc stir till choc melted, put into fridge for 1/2 hour or so!. use 1/3 in the middle 2/3 on top!.Www@FoodAQ@Com

Try reducing the temperature, and cook more gently for longer so it wont burn!. this usually happens to me when I cook too hot - so the outside looks all done but inside it isnt!.

Is it a fan oven, if so they tend to cook much faster than other types of oven!.Www@FoodAQ@Com
