Gelatin which is an animal product is not used to make jam or jelly !. The thickening agent used is pectin which is a fruit based product!. If you buy a box of pectin at the store they'll have sugar free recipes on the instruction sheet in the box!. Open the box in the store and read what you need to buy they also have freezer jam recipes!. try googling sugar free jam recipes and I'm sure you'll find lots of advice & recipes!. Agave syrup seems to be the choice for people who want a sweetener that is friendly to diabetics and people avoiding regular sugar or other sweetners!. The book Stocking Up includes many recipes for preserves that use no sugar, however they do use honey!. If by "sugar substitute" you mean things like Equal or Splenda, this might work for you!.
here's a very easy one that requires no cooking:
Raw Strawberry Jam
Wash, hull, mash strawberries!. Add honey to taste if desired!. If the mix is very juicy you may wish to thicken it with wheat germ flour (blenderized wheat germ) or rice flour!. A nice addition for flavor is minced fresh mint leaves!. Keep covered in the refrigerator!.Www@FoodAQ@Com

I am sorry to disappoint you, but there is no such thing! You need the sugar (and the gelatin for lower sugar content) added to fruit to make a jam or conserve!. That is the definition of jam!
My advice is just buy frozen strawberries then defrost and mash them up when you want to make sugar-free, gelatin-free jam! No need to cook either, so you are preserving the vitamins!.Www@FoodAQ@Com
