For the ending cooking process, according to the safety cooking guidelines in my Food Lovers Companion, Vol!. III, it should be 170!. I personally think you can go with 160, with no blood lines close to the bone and a white clear liquid upon cutting the protein!. And yes, I have tested this myself with "bone in" and non "bone in chicken" cooking!. This, of course, includes a 10 minute resting period after taking the chicken out of the heating unit and remember, proteins continue to cook after they are pulled from the heat!. You should have the oven on about 160 degrees celcius and the chicken should be a minimum of 75 degrees on the inside when cookedWww@FoodAQ@Com

When I Oven cook Chicken parts, I put it at 325 degrees for 50 minutes!. If I'm roasting a WHOLE Chicken- it's at 325 for an Hour & a Half!.!.!. -It comes out DELICIOUS- every time! :)Www@FoodAQ@Com
