Answers:
Season with kosher salt and freshly ground pepper (a fair amount)
Place a few tablespoons of canola oil or grapeseed oil in a frying pan!. Sear them in the really hot pan for a few minutes on each side so they get a nice brown crust on them
Finish them in a pre-heated 350 degree oven for about 5 - 8 mintues!. Place the whole pan in the oven
Take them out, be careful of the hot pan, and Let them rest for at least 5 mintues covered with aluminium foil!.
This will be a medium steak!.!.!.if you want med!. rare, keep them in the oven for just about 5 minutes!.
oh yeah!.!.!.whatever you do, please do not use A1 or ketchup!. This totally ruins the integrity of the steakWww@FoodAQ@Com

Filet mignon means wrapped in thick-sliced bacon!. Set your cooking rack so the top of the meat is about 6-8 inches from the broiler so it doesn't burn the top while the interior of this very thick steak is heating up!.
Watch them and when the blood starts to apear on top; flip them and cook for two minutes less than the first side and you will have delicious medium rare(hot pink inside) steaks!.
I rub mine with A-1 sauce before cooking and if I am not serving with baked potatoes, I usually drench them in garlic butter when I pull them out of the broiler!.
Serve on pre-heated plates with a garnish!.

i watch them, turn them with the top looks right, and when the 2nd side gets close, turn the broiler off!.
at that point, you can take them out and cut one through the middle!.
if it's good, have at it!.
if not, back in and bake a bit longer!.
actually, i like steak tartar, so they're always good!.
unfortunately, most like 'em a bit more done!.
some put ketchup on to prevent the outside from drying out!.

Best on the grill or stove top, so you don't overcook them!. If you must use the oven, the top broiler will do well, again keep watch not to over cook them!. Salt, pepper, garlic powder and a dab of butter on top!.Www@FoodAQ@Com
