Oh yeah, I hear ya on this one! When I lived in Naples, FL this was a daily concern for me, hot foods just turned me off and I fell in love with Deli Sandwiches, wraps, stuffed Pita's, tossed greens with fresh veggies, fresh fruit and sorbets, frozen fruit bars and smoothies! Dairy products made my stomach upset from the heat, but I did love a good vinegar based Coleslaw, pasta salads with a variety of vinaigrettes and veggies, snacker stackers I called them but they were rolled deli meats and cheeses without the bread filled with sauteed peppers or onions, tomatoes, thinly sliced cucumbers or zuchinni, pepperoni rolls (not cooked, italian meats with cheese and some cold marinara sauce, pesto) I always had carrots, celery, apples, oranges, grapefruit on hand and cut up in advance for quick bites, fresh banana's for their potassium (great for a sweaty environment) always had extra chicken breasts on hand (when the oven DID go on, I cooked double) so I could have them for sandwiches or salads!. Without buying the typical Boxed Microwave meals, I utilized this more than I ever had before, because of it's lack of heat inside the house!. Well, without writing a novel here, I hope I've helped you out today!. Summer has just begun here too, so a flood of past cooking methods are happening to me too!. Salads with sliced meats, shredded cheese, chopped hard boiled eggs and lots of veggies; sandwiches; buy a rotisserie chicken or fried chicken from the deli at you grocery store along with some sides of coleslaw, mashed potatoes and macaroni and cheese; if you have a grill, grill burgers, hot dogs or sausages on it and bake some potatoes and/or corn on the cob wrapped in foil in the coals; fresh fruit salad; three bean or kidney bean salad with diced ham or turkey; ham salad, turkey salad, chicken salad served with sliced tomatoes and cucumbers!.!.!.

1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice
Combine all ingredients in a bowl until well combined and chill!. Serve with a lettuce garnish!.Www@FoodAQ@Com

Chickpea Salad
2-14oz cans chickpeas, drained and rinsed
?-cup very thinly sliced heart of celery, including some of the chopped leaves
?-red onion, minced
3-tbsp minced fresh Italian parsley (flat leaf)
1-small jalapeno, minced
6-tbsp extra-virgin olive oil
3-tbsp white wine vinegar
Salt to taste
In a large bowl, combine all ingredients
Season to taste with salt
Serve immediately, or let stand an hour or two, and re-adjust salt and vinegar
Wild Rice Salad
Salad:
2-cups (500 ml) wild rice
?- cup (125 ml) diced dried apricots
?- cup (125 ml) diced dried apple
1/3-cup (75 ml) dried cranberries
?- cup (50 ml) golden raisins
Dressing:
2-tbsp (25 ml) canola oil
2-tbsp (25 ml) orange juice
2-tbsp (25 ml) white wine vinegar
4-tsp (20 ml) Dijon mustard
1-tsp (15 ml) liquid honey
?- tsp (1 ml) each salt and pepper
?-cup (50 ml) chopped fresh mint
In large pot of boiling salted water, cover and cook wild rice until tender, about 35 minutes
Drain well and transfer to large bowl
Add apricots, apple, cranberries and golden raisins
Set aside
Dressing:
In small bowl, whisk together oil, orange juice, vinegar, mustard, honey, salt and pepper
Pour over rice mixture and toss gently
Let cool; cover and refrigerate until chilled, about 4 hours (Make-ahead: Refrigerate for up to 24 hours!.)
To serve, add mint and toss to combine!.
Grilled Quail with Herbs & Mustard
6-quail
1 1/2-cups loosely packed, stemmed mixed herbs, such as basil, rosemary, oregano, thyme, marjoram, chives, and/or flat parsley
3-cloves garlic, roughly chopped
1-tsp coarse salt
1/2-tsp black pepper
1/4-cup Dijon mustard
1/4-cup lemon juice
1/2-cup extra-virgin olive oil
Place the herbs, garlic, salt and pepper into a food processor and process until finely chopped
Add the mustard, lemon juice & olive oil
Briefly process to make a thick paste
Butterfly the quail by cutting out the backbone with a pair of kitchen shears
Place the quail breast side up and press down on the breast to flatten
Place quail and marinade into a re-sealable plastic bag
Toss to evenly coat
Marinate for 4 to 6 hours in the fridge
Place a skewer through the thigh area of three quail and another at the wing area; they should now be secure
Repeat for other 3 quail
