Question: Healthful meal ideas without weird ingredients!?
I have a family of six and we're REALLY trying to cut out the processed foods, but I find it hard to find healthful recipes that my family will eat!. We are all pretty plain eaters!. We don't like things with 400 ingredients (especially me beacause I'm the one cooking it!) and we don't eat fish!. Help!?Www@FoodAQ@Com

i'll give you one of my favorite easy recipies that can be made quickly and for a lot of people!. edit if need be:

Fried rice:
brown rice
assorted veggies, chopped
eggs, beaten
meat (optional)
soy sauce
sesame oil
salt
pepper
whatever seasoning you think necessary
1!. cook brown rice accordingly!. set aside to cool!.
2!. heat veggies in a pan over medium-high heat until slightly browned (not completely cooked)!. add soy sauce, oil, and salt and pepper!.
3!. add rice [and meat] to veggies!. cook approx!. 5 minutes
4!. reduce heat to medium and add beaten egg and mix to break up so you dont get one big clump of egg!.
5!. serve whenever necessary!.
*can also be used with pasta instead of rice; cook as if it were the rice*Www@FoodAQ@Com

Baked ziti -

1 box of ziti noodles
1 1/2 cups shredded mozerella cheese
2 cups of tomato sauce
1 cup ricotta cheese
2 tbsp italian seasoning

Preheat oven to 375!. Boil ziti noodles according to package directions!. Put ziti noodles in a deep casserole dish!. Mix ricotta cheese and italian seasoning together!. Mix in with noodles, along with the tomato sauce!. Sprinkle mozerella cheese on top!. Put in the over for 10-15 minutes, or until the mozerella cheese is melty and golden brown!. Serve with a side salad and enjoy!.!.!.very simple recipe!.

Angel hair pasta with veggies and cheese -

1 box of angel hair pasta
Salt
3 cups of mixed vegetables (frozen are just as good as fresh)
Parmesan cheese
3 tbsp of low fat margarine or butter or any subsitute for such

Boil the angel hair pasta according to the box directions, make sure to salt the water first!. Put the vegetables in the microwave along with the 3 tbsp of butter and microwave for 5 minutes!. Drain the pasta and put in a large bowl!. Dump the mixed vegetable and butter mixture on top of the pasta and mix together!. Top with parmesan and serve with a salad!. Sometimes I bake chicken with this and chop it up to add on top!. It is simple and filling and so so easy!.

Easy easy stir fry -

1-2 bags of stir fry veggies (found in the produce section precut)
1 package of chicken breasts (about 1lb)
1/4 cup of soy sauce
1 cup of white rice
1 can of chicken broth
Non stick cooking spray

First do the rice, as it will take 20 minutes and the stir fry will only take about 10!. Boil 2 cups of liquid ( use the can of chicken broth, and add water until you get 2 cups of liquid)!. Bring to a boil and add 1 cup of rice!. Cover and lower the heat to low!. Leave for 20 minutes!. Spray some non stick cooking spray in a non stick pan and put on medium-high heat!. Slice the chicken into bite sized peices and put in the pan until it turns white!. Add the veggies and stir around with the chicken for a minute or so!. Then gradually add the soy sauce!. Keep stirring until everything is cooked!. This generally takes 10 minutes or so!. If you start the stir fry 10 minutes after you start the rice, you should finish both at the same time!. This is such a low fat meal and it gets lots of flavors and vegetables and protein into one meal!. It's so good!.

Lean meat, veggie, starch!. I know, basic!. But it's good!.

Start with any lean meat - chicken, beef, pork, etc!. Make use of spices you like - salt and pepper, thyme, rosemary!. There are shops where you can smell the spices before buying!. If you like how they smell, you'll likely enjoy the taste!.

Make up veggies - they now have these steam bags that make it so easy!. Chop up the veggies, toss them in the bag and microwave!. Season with spices or a sauce!.

Then a starch - bread, rice, potatoes!.

You can do this in any combo and it gives you good variety as well as a lot of nutrition!. And it's easy!.

Some ideas:
chicken with green beans and mashed potatoes
flank steak with rice and broccoli
pork chops with fresh bread and salad

You can also do soups or stews which are more cost effective!. Dhal is delicious, as is pea soup!.

Great vegetarian book to consider is "The Passionate Vegetarian" by Crescent Dragonwagon!. Over 1,000 pages of really terrific recipes!.

I like to make chicken breasts by poaching them in chicken broth!. This way they don't dry out like they would in the oven and it's a healthier way to prepare them than frying!. You can season the broth/breasts anyway you like but I prefer sea salt and pepper and a little bit of Italian seasoning!. Simple and healthy!!Www@FoodAQ@Com

Cajun SHrimp Noodles

Vegetable oil
Kosher salt
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package!.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat!. Add the garlic!. Saute for 1 minute!. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often!. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes!. Toss to combine!.

When the pasta is done, drain the cooked linguine and then put it back in the pot!. Immediately add the shrimp and sauce, toss well, and serve

Swiss Steak

1 round or cube steak, (approximately 1?lbs), see note
1 teaspoon garlic powder
Salt and pepper
All-purpose flour, for dusting
1/3 cup vegetable oil
2 cloves garlic, crushed
1 (14-1/2 oz) can diced tomatoes
1 medium onion, cut into strips
1 medium bell pepper, cut into strips

Cut steak into serving-size pieces!. Season, to taste, with garlic powder and salt and pepper!. Dust meat with flour!. In heavy skillet, brown both sides of meat in vegetable oil!. Transfer to Dutch oven!. Combine garlic, tomatoes, onion, bell pepper, and 1 tomato-can measure of water!. Pour over steak and simmer over low heat until meat is tender, about 1? hours adding water, if necessary to keep meat partially covered!. Season, to taste, with additional salt and pepper!.

Hint: Cook this in a slow-cooker on low for a most fabulous dinner!. Low heat on a slow cooker is about 200 degrees F and high heat on a slow cooker is about 300 oF!.
Note: to ensure tenderness, it is necessary to have the butcher run the round steak through a cuber

Chili Sauced Pork Chops
1/4 cup apricot jam or preserves
1/4 cup chili sauce
1 tablespoon sweet-hot mustard or brown mustard
1 tablespoon water
4 boneless pork top loin chops, 1 inch thick (about 1-1/2 pounds total)

Directions
1!. For glaze, cut up any large pieces in apricot jam or preserves!. In a small saucepan combine jam or preserves, chili sauce, mustard, and water!. Cook and stir over medium-low heat until heated through and well blended!. Remove from heat!.

2!. Trim excess fat from pork chops!. Place chops on unheated rack of broiler pan!. Broil 4 to 5 inches from heat for 8 minutes!.

3!. Turn pork chops; brush generously with glaze!. Broil 8 to 12 minutes more or until juices run clear!. Spoon any remaining glaze over meat before serving!.

Creamy Ziti with Sausage
8 ounces dried pasta such as ziti, tagliati, rigatoni, or mostaccioli
12 ounces fresh Italian sausage links, sliced
1 2-1/2 cup portion Basic Italian Sauce, thawed or 1, 27- to 30-ounce jar meatless spaghetti sauce
1/3 cup whipping cream, half-and-half, or light cream
Shredded Parmesan cheese (optional)

Directions
1!. Cook pasta according to package directions!. Drain; keep warm!. Meanwhile, in a 2-quart saucepan cook sliced sausage over medium heat until cooked through, turning frequently!. Drain well!.

2!. Add thawed Basic Italian sauce to saucepan with sausage; bring to boiling!. Stir in cream; heat through!. Toss with hot pasta; sprinkle with Parmesan cheese, if desired
