Quick and Easy Oatmeal Pancakes
Ingredients:

* 1 1/2 cups rolled oats
* 2 cups buttermilk (if you do not have buttermilk handy you can make some using regular milk and lemon juice!. Add 2 tsp of lemon juice to the 2 cups of milk and let stand for 5 mins before using in recipe)
* 1/2 cup flour
* 1 teaspoon sugar
* 1 teaspoon baking soda
* 1 teaspoon salt
* 2 eggs, beaten

Preparation:
Combine oats and buttermilk!. Beat in remaining ingredients!. Heat a griddle and coat with a little oil or shortening!.

Cook pancakes on hot griddle, turning to brown both sides!.

Serve with syrup or fruit - enjoy!

Try these modifications:
Cinnamon Maple flavour -add cinnamon (just a dash!) and a tsp of maple syrup to batter
Blueberry pancakes: Add ? c blueberries (fresh or thawed) to recipe
Oat-Nut pancakes: Add 1 ? tbsp diced pecans, walnuts, or almonds to recipe!.
Whole Grain pancakes: Replace quick oats with hot multigrain cereal!. Prepare as directed!.

Ingredients
1/2 cup milk
1/3 cup quick-cooking rolled oats
1/3 cup all-purpose flour

Directions
In a small saucepan heat the milk until hot; remove from heat!. Stir in the oats!. Cover and let stand for 5 minutes!.

Meanwhile, in a medium bowl stir together the flour, brown sugar, baking powder, salt, and cinnamon!. Make a well in the center of flour mixture!.

In a small bowl stir together the egg, oil, and vanilla!. Add the oat mixture and egg mixture all at once to flour mixture; stir just until combined!.

For each pancake, pour about 1/4 cup of the batter onto a hot, lightly greased griddle or heavy skillet!. Cook over medium heat about 4 minutes or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry!.

Strawberry-Orange Sauce: In a small saucepan stir together 1/2 cup orange juice and 1 teaspoon cornstarch!. Cook and stir over medium heat until thickened and bubbly!.
