i usually stuff meatball mix in between each breaded eggplant for stuffed eggplant, but you could just make quicky meatballs!. or italian sausage but the sausage takes along time to cook!!!!.!.!.!.!.!.

Meatballs! I love eggplant and my boyfriend loves meat so I make them together with spaghetti and garlic bread and it is a great meal!. OR Italian sausage also goes very well, you may try making sauce with hunks sausage in it and use that in a pasta casserole, add eggplant Parmesan on top and bake in one dishWww@FoodAQ@Com

traditionally, eggplant Parmesan is served as a meatless meal!. however, any type of Italian sausage would compliment this dish, as would something as simple as grilled lamb chops or chicken breast!.Www@FoodAQ@Com
