Question: Does anyone have a casserole recipe with a Mexican flair!?
Answers:
MEXICAN CASSEROLE
1 pound hamburger meat
1/4 onion chopped fine
1/2 teaspoon garlic powder
1 can Ranch Style beans
1 cup cheddar cheese, grated
1 can cream of chicken soup
1 can original Rotels, undrained
6 corn tortillas
Brown meat with onions and garlic powder!. Drain!. Add salt and pepper to taste!. Add ranch style beans and stir!. Line 9 inch x 13 inch pan with the six tortillas!. Pour meat mixture over tortillas!. Sprinkle cheese over meat mixture!.Mix soup and Rotels in bowl!. Spread soup mixture over cheese!.
Cover with foil, and bake at 350 degrees for approximately 30 minutes (until hot and bubbly)!.

MEXICAN LASAGNA!!!

1 lb ground beef
1 Tbsp Chili powder
1 Tbsp chopped fresh, Cilantro
1 24 oz!. jar Salsa
3 Cups Cottage cheese
1 can of Corn, drained
10 Corn Tortillas (oft or hard)
2 cups shredded cheddar
1 can Black Beans ( drained)


Sauce:
Brown hamburger with onions and drain off fat!.
Mix in your favorite Salsa, plus
one tablespoon Chili Powder and
one tablespoon fresh, chopped Cilantro!.
Add one can of of corn!. ( drained) Mix well!.

Place a thin layer of sauce on the bottom of a lightly greased 9 X 13 pan!. Break apart the tortillas and create a layer over the sauce!. Spoon about 1/3 the cottage cheese over the tortillas, then layer 1/3 the beans and 1/3 the cheddar as well!.

Repeat layering, and top with chives and paprika if desired!.

Bake at 375 for 40-45 minutes (until bubbly)

Taco Casserole

2 packages soft flour tortilas
1 large jar salsa
2 pounds lean ground beef
1 large package shredded cheddar cheese
sour cream

brown ground beef in skillet and drain off grease
in a 13x9 pan put a few tablespoons of salsa , spread over bottom of pan!. On top of this lay down a layer of flour tortilas to cover bottom of pan!. spread half of ground beef over tortilas, half jar of salsa, and half pkg!. of shredded cheddar cheese!.Now lay another layer of tortillas on top , the rest of ground beef, then pour rest of salsa over this,and add remainning pkg of shredded cheddar!. Bake in 350 degree oven for 35 minutes Cut into squares like you would lasagna, top with sour cream!.It is delicious !Www@FoodAQ@Com

Heres some i had collecting dust in my files, i have made all 3 and they are very good!.

Mexican Chicken Casserole

3 C!. cooked chicken, cut into cubes
1 C!. chicken broth
1 can cream of chicken soup
1 can cream of mushroom soup
3 T!. Picante sauce or hot taco sauce
8 oz!. shredded Cheddar cheese
13 oz!. bag of Doritos, slightly crushed

Preheat oven to 350oF!. Mix chicken, broth, soups and picante (or taco) sauce together!. In a greased 9 X 13 pan make a layer of crushed Doritos, then chicken mixture, then cheese; repeat, ending with cheese!. Bake 30-40 minutes!.

NOTE: Don't add salt to chicken while cooking it, as there is enough salt in the Doritos and cheese to make it salty enough)!.

Nacho Chicken Casserole

4 cups diced (1/4 to 1/2 inch) cooked chicken
1 can (15 oz) Progressive pinto beans, drained, rinsed
1/2 cup Old El Paso Thick 'n Chunky salsa
1 can (10 3/4 oz!.) condensed nacho cheese soup
1 1/2 cups shredded Cheddar cheese (6 oz)
1 cup shredded lettuce
1 medium tomato chopped (3/4 cup)
1 can (2 1/4 oz) sliced rip olives, drained, if desired!.!.

Heat oven to 375°F!. In large bowl, mix chicken, beans, salsa and soup!. Spoon evenly into ungreased 8-inch square (2-quart) glass baking dish!. Sprinkle with cheese!. Cover dish with foil!. Bake 30 to 40 minutes!. Uncover dish; bake 5 to 8 minutes longer or until edges are bubbly!. Top with lettuce, tomato and olives!.

Taco Casserole

1 lb!. lean ground beef -- drained
1 1/2 cups whole kernel corn -- drained
1 cup pinto beans -- drained
1 can condensed tomato soup
1/4 cup water
1 packet taco seasoning mix (reserve 1 tsp for topping)
1 cup Bisquick mix
1 egg
1/2 cup skim milk
1 cup grated lowfat cheese

Brown and drain ground beef!. If desired, rinse beef under hot water to remove extra fat!. Add beans, corn, soup, water, and all but one teaspoon of the taco seasoning!. Pour into 9-inch square baking dish!. In a separate bowl, combine Bisquick, egg, milk, cheese, and 1 tsp taco seasoning until well blended!. Top meat/bean mixture with Bisquick topping mixture, spreading gently to ensure that entire casserole is covered with topping mix!. Bake15-20 minutes at 375 deg!. (400 if using metal pan) until topping is set and just lightly brown!. Let cool slightly before cutting!.
