Spaghetti Casserole

Simple & Delicious
Ingredients:

* 1 package (16 ounces) angel hair pasta
* 1-1/2 pounds ground beef
* 1 jar (26 ounces) spaghetti sauce
* 2 cans (8 ounces each) tomato sauce
* 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
* 1 cup (8 ounces) sour cream
* 2 cups (8 ounces) shredded Colby-Monterey Jack cheese

Directions:
Cook pasta according to package directions!. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain!. Stir in spaghetti sauce and tomato sauce!. Remove from the heat!.
Drain pasta!. Combine soup and sour cream!. In two 8-in!. square baking dishes, layer half of the meat sauce, pasta, soup mixture and cheese!. Repeat layers!.
Cover and freeze one casserole for up to 3 months!. Cover and bake the remaining casserole at 350° for 55-65 minutes or until cheese is melted!.
To use frozen casserole: Thaw in the refrigerator overnight!. Remove from the refrigerator 30 minutes before baking!. Bake as directed!. Yield: 2 casseroles (6 servings each)!.Www@FoodAQ@Com

Ham & Cheese Casserole
1/2 cup flour
1/4 teaspoon pepper
2 teaspoon salt
1/2 cup butter or margarine - 1 stick
3 cups milk
4 cups ham - chopped
5 cups potatoes - thinly sliced
3 cups cheese - cheddar, shredded
1 onion - chopped
1 green bell pepper - chopped
Preparation:
Mix flour, pepper, and salt (omit salt if you think ham and cheese are salty enough, I do)!. Melt butter in saucepan!. Add flour mixture!. Cook over medium heat for one minute, stirring constantly!. Remove from heat!. Stir in milk!. Return to heat and cook until thick!.
In a very large bowl, mix remaining ingredients with sauce!. Bake in covered casserole dish(es)!. Bake in 350 F!. oven for 90 minutes!. Remove cover after first 30 minutes!.
Let cool 15 minutes before serving!. It's even better as leftovers!.
To reduce clean-up, I suppose the sauce could be started in a stockpot, and then everything combined in that before putting it in casserole dishes!.

Broccoli Chicken Casserole
2-3 boiled chicken breasts, diced into small chunks
(just boil the chicken for at least 10-15 minutes or until no longer pink)
Cool and then cut into chunks
1 pkg broccoli
1 can of cream of chicken
Pepperidge Farm Stuffing
1/2 c!. mayonnaise
1 1/2 tsp!. lemon juice
4 oz pkg mild cheddar cheese
Boiled the broccoli for 5 minutes, then drain!.(Boiling the broccoli speeds up the cooking time)!.
Combine soup, mayonnaise, and lemon juice!. Mix with broccoli and diced chicken!. Sprinkle with cheese and stuffing mix!. Bake at 350' for 35 minutes :0}

Rice and broccoli casserole
10oz broccoli, thawed, not cooked
2c!. Minute rice, uncooked (i use success rice)
1 can cream of celery
1 soup can of water
8oz cheese whiz -(i sometimes use more, the cheesier the better)
1/2 stick butter, melted
Mix all the ingredients together and bake for 30 minutes at 350!. Spray the baking pan with Pam first!.

This casserole is absolutely delicious!.
Hashbrown Potato/Sausage Casserole
1 pound Brown & Serve link sausages (I prefer maple flavor)
2 pounds!. frozen hashbrowns potatoes, thawed
10 oz pkg cheddar cheese, grated
8 oz!. sourcream
1 can cream of celery
1 tsp!. salt
1 tsp!. pepper
1/2 stick butter, melted
Brown sausage, and set aside!. Mix all other ingredients together!. Put in lightly greased casserole!. Bake at 350' for 45 minutes!. Remove from oven, and place sausage on top!. Cook for another 15 minutes!. You can also use lil smokies or beef smoked sausage or kielbasa pieces instead of link sausages!.

PIZZA RICE CASSEROLE
3/4 pound ground beef
1 medium onion
2 cans (8 ounces each) tomato sauce
1 tsp!. sugar
1 tsp!. salt
1 tsp!. dried parsley flakes
1/4 tsp!. garlic powder
1/4 tsp!. oregano
Dash pepper
2 cups cooked rice (I use Success rice)
1/2 cup small-curd cottage cheese
1/2 cup shredded mozzarella cheese
--- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain!. Add the tomato sauce, sugar, salt, parsley, garlic powder, oregano and pepper!. Bring to a boil!. Reduce heat; cover and simmer for 15 minutes!. While the hamburger mixture is simmering, combine the rice and cottage cheese in a bowl; spoon half into a greased baking dish!. Top with half of the meat mixture!. Repeat layers!. Sprinkle with mozzarella cheese!. Bake, uncovered, at 325' for 30-35 minutes or until heated through and bubbly!. Yield: 4 servings

Beef Taco Bake-Campbell's casseroles cookbook
1 pound ground beef
1 can (10 3/4 0z) campbell's condensed tomato soup
1 cup chunky salsa or picante sauce
1/2 cup milk
6 (8 inch) flour tortillas or 8 (6 inch) corn tortillas, cut into 1- inch pieces
1 cup shredded cheddar cheese (4 ounces) ( I sometime uses the Mexican cheese blends)

I have three chicken ones that I make quite a bit!. The Oriental Casserole is my favorite!. I actually subsititue the celery and mushrooms for bamboo shoots - approximately a 1/2 can minced!. The Southwest Chicken is great if you want something with a little kick (you can make it as hot as you like)!.

***Oriental Chicken Casserole***

3 cups cooked chicken (cubed)
1 ? cups thinly sliced celery
1 medium onion (chopped to desired size)
1 small can (1/2 C!.) sliced mushrooms (chopped)
1 8 oz!. can sliced water chestnuts (chopped to desired size)
2 T!. butter
? cup mayonnaise (more if needed)
? cup sour cream (more if needed)
2 T!. Soy sauce
2 T!. lemon juice (1 T!. if a concentrate)
1 can (3 oz!.) Durkee French fried onion rings
1 pkg!. pasta egg noodle!.

Directions
Boil chicken until done (don’t overcook) (remove any bones/skin), Set aside

Preheat oven 350oF

Sauce: Mix mayonnaise, sour cream, soy sauce and lemon juice together in small bowl!. Set aside!.

Sauté in large pan: 2 T!. butter, the celery, onions, mushrooms (until onions are a little translucent – do not brown)!.
Add water chestnuts and chicken, and sauce mixture!. Mix thoroughly!.

Pour into ungreased 12 x 8 (!?) glass casserole dish!. Sprinkle with onion rings!.
Bake 20 minutes or until hot!.

Cook egg noodles (per package directions) to be done when casserole is done!.

Serve over egg noodles (or plain, or over crunchy Chinese noodles) and enjoy!

***Chicken Noodle Casserole***

3 C!. uncooked no-yoke noodles
1 lbs white meat chicken – cut in strips or cubes
1 med!. onion – chopped
1 Can whole kernel corn (drained) (small or large
depending on what you like)
1 Can fat free cream mushroom soup
? C!. fat free sour cream (may need a little more
depending upon consistency)
S & P

Cook noodles according to directions, drain and set aside!. In a large skillet, cook chicken and onions until meat is no longer pink!. Stir in noodles, corn, soup, S & P, into chicken mixture!. Mix in noodles!. Put in casserole dish!. Cover and bake 350o for 30 min!. Uncover, bake 15 min!. more!.

Note: can use beef, pork or chicken

***Southwest Chicken***

3 Cups cubed cooked chicken (I boiled it)
1 Pkg!. Pasta (I used no yoke noodles)
1 T!. olive oil
2 red peppers – cut in strips or cubes (as desired)
2 green peppers – cut in strips or cubes (as desired)
1 med-large onion - chopped
3 cloves garlic (mashed or diced)
1 medium jar salsa (I used mild)
2 C!. package of shredded cheddar cheese (I used
Nacho/Taco flavored shredded cheese
1 sm!. Container of sour cream (or more - to desired
consistency
1 T!. chopped cilantro
4 dashes of Tabasco sauce
Sprinkle paprika
Sprinkle parsley
Pepper

Cook pasta according to directions, drain and set aside!.
Saute pepper, onion, garlic in olive oil until softened (5 – 6 minutes)!. Add paprika, parsley, pepper, Tabasco, cilantro!.
Add salsa, chicken, sour cream and cheese!.
Add desired amount of pasta!.

Place in 13 x 9 casserole dish and bake 30 minutes (approximately)!.

Or – you could mix all ingredients on stove (except for the pasta), until hot, then pour over pasta and serve!.Www@FoodAQ@Com

Did a fabulous one last night!. For 2 people!.

2 Chicken breasts chopped into pieces!.
Handful of mushrooms chopped!.
Toss all of it in flour!. Fry for about 3 minutes to just brown!.
Put into casserole!.

1/2 pint of water + stock cube, plus 2 tablespoons of Dijon mustard + 2 teaspoons of Worcestershire sauce!. Stir!. Pour over chicken!.
Cover!.
put in oven for 45 minutes
Stir in 1 small carton Greek yogurt!.

Wonderful!

It's so easy and so nice I'm thinking of doing it for our next dinner party!
