-Wash and drain spinach, then squeeze dry between layers of paper

30 ounces tomato sauce

14oz fresh or frozen spinach
1/3 cup chopped tomatoes
1/2 tsp chilli powder
1/2 tsp turmeric
1/2 tsp fenugreek seeds
1/2 tsp cumin seeds
1!. Weigh spinach after you have removed the stems and chopped it!. Wash thoroughly and drain in colander!. If using frozen spinach, defrost and squeeze out excess water before weighing!.
2!. Scrub the potataoes (don't peel them)!. Cut into small chunks!.
3!. Using a good, heavy non-stick frying pan add the seeds and dry fry (without oil) to release their flavour!. Watch this carefully, they will only need a few seconds!. Don't let them scorch!. If they burn, throw them away and start again!.
4!. When they are hot, add the tomato, turmeric and chilli powder (salt is optional)!. Mix and cook for 30 seconds!.
5!. Add the spinach and tomatoes and mix well to coat with the spices!.

1 cup milk
1/2 cup butter, melted
1 onion, chopped
1 (8 ounce) package shredded mozzarella cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease a 9x13 inch baking dish!.
Place spinach in a medium saucepan with enough water to cover!. Bring to a boil!. Lower heat to simmer and cook until spinach is limp, about 3 minutes!. Remove from heat and set aside!.
In a large bowl, mix flour, salt and baking powder!. Stir in eggs, milk and butter!. Mix in spinach, onion and mozzarella cheese!.
Transfer the mixture to the prepared baking dish!. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean!. Cool before serving!.

Spinach Noodles ---
INGREDIENTS
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 eggs
1 teaspoon salt
2 cups all-purpose flour
DIRECTIONS
In a blender or food processor, combine spinach, eggs and salt; process until smooth!. Pour into a bowl!. Gradually add enough flour to make a firm, but not sticky, dough!. On a floured surface, knead about 20 times!. Wrap in plastic wrap and let rest 30 minutes!. Divide dough in half!. On a floured surface, roll each half to 1/!.16-in!. thickness!. Roll up jelly-roll style and cut into 1/4-in!. slices!. Separate the slices and let rest on a clean towel for at least 1 hour!. In a baking dish layer pork chops seasoned with liquid smoke (hickory) and kosher salt!. Add layer of spinich and drizzle a few drops of liquid smoke on it too!. Bake in oven for 45 minutes at 350 F!.
