Answers:
Simply put, you melt the cheese of your choice!.

A stick or cubes of Velvetta would be pretty similar to what they serve in the movie theatres, but I think you can do better than that!.

I'd say get a stick of sharp cheddar and a stick of montery jack (with jalapenos imbedded, even better)!. Put sticks in a small pot (fondue or double boiler, even better) and melt over low heat!.

At this point you can mix in your favorite flavors!.!.!. maybe additional chopped peppers or salsa would be a good start!.

If you're feeling lazy though, The "Salsa Con Queso" in the tostido chip section of your local supermarket is pretty darn good if heated up!.Www@FoodAQ@Com

Nachos Simplified

4 cups tortilla chips
1/2 pound cheddar cheese -- grated
1 7 oz jar green chile salsa
1 cup guacamole

Arrange the tortilla chips in eight individual casseroles!.

Divide the grated cheddar over the chips, then spoon salsa on each!.

Broil about 3 or 4 minutes or until hot and lightly browned, then top each with a spoonful of guacamole and serve at once

Makes 4 servings

Ingredients
1/2 package (4 ounces) fat-free cream cheese, cubed
1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
1/4 cup mild or medium chunky salsa
2 teaspoons reduced-fat (2%) milk
4 ounces baked tortilla chips or assorted fresh vegetable dippers





1!. Combine cream cheese and Cheddar cheese in small saucepan; cook and stir over low heat until melted!. Stir in salsa and milk; heat thoroughly, stirring occasionally!.

2!. Transfer dip to small serving bowl!. Serve with tortilla chips!. Garnish with hot peppers and cilantro, if desired!.


Olé Dip Substitute reduced-fat Monterey Jack cheese or reduced- fat taco cheese for Cheddar cheese!.
Spicy Mustard Dip Omit tortilla chips!. Substitute 2 teaspoons spicy brown mustard or honey mustard for salsa!. Serve with fresh vegetable dippers or pretzels!.Www@FoodAQ@Com

a saucepan over flame, not a microwave thats for sure because you'll burn the top!. Buy some cheese in cube or stick form and melt it slowly!. Cubes melt easier than a stick, or if you have a stick i find it easier to cut it up a bit!. Dont put the heat on too high because you'll burn, and keep stirring!.Www@FoodAQ@Com

Walmart or your local grocer sells "nacho cheese" in a can!. you can get it in either the small can, like canned peas, or in a large can like schools and restaurants use!.Www@FoodAQ@Com

first- mince some jalapeno peppers (i suggest the canned ones) add a little of the juice for flavor
second- melt Velveeta with a little bit of Cheddar cheese
