Question: Bored with my chicken tenders!?

Here's how I "fry" chicken!. I spray a griddle with olive oil spray, and saute a little garlic on it!. Meantime, I dredge thin cut pieces of chicken breast in a mixture of Progresso Italian Bread Crumbs and some parmigiana cheese!. I cook them on the griddle!. I use the really thin kind, so it doesn't take very long!. Flip them so you cook both sides!. Just before you flip, squeeze the juice from a lemon over the fillets, then do it on the other side once it's almost done!. I like to serve this with boiled white potatoes (but then, I like to serve those with everything since I really really like them) on a bed of grated zucchini!. Just grate the zucchini directly into a frying pan sprayed with Pam or something!. I like the olive oil spray, but whatever is fine!. It cooks very quickly and you really just cook it long enough that it all gets hot!. Spread it out on a platter, and put the chicken and potatoes on top of it!. The chicken goes really well with Milanese risotto (the kind with saffron and mushrooms) but unless you use the box kind, it takes a long time to cook and more work than I'm willing to do!.

Another very easy thing is to just saute them in a dab of olive oil, then add a jar of salsa!. Serve with corn mixed with black beans and a dab of sour cream, and Spanish rice!.Www@FoodAQ@Com

This is really easy and only uses four ingredients!. I use the breaded chicken tenders!. First cook the chicken tenders according to the package directions, using the Conventional Oven method!. Then put the chicken in a large skillet with a jar of your favorite sweet and sour sauce (10 oz), a can of pineapple tidbits (8 oz) and a 16 oz package of frozen oriental vegetables!. Just cover and let simmer for about 25 minutes or until the vegetables are tender!. I serve this over rice!.Www@FoodAQ@Com

Put them in a soup with broth, your favorite veggies and either rice or egg noodles!. You could also put them in a crock pot to make either barbeque chicken or sweet and sour chicken!. For the barbeque chicken, put them in first, then a bottle of your favorite BBQ sauce, and 3/4 bottle of water!. Add veggies, and cook on low for 8 hours or high for 4!. For sweet and sour chicken, there's a good frozen sweet and sour veggie mix sold in the freezer section at the grocery store!. I mix 2 cups of water and 2 buillion cubes first, then the sauce mix from the package, then add the chicken!. Once the chicken is completely submerged, I add the veggies, and cook on low for 8 hours or high for 4!. TENDER ITALIAN BAKED CHICKEN

INGREDIENTS

* 3/4 cup mayonnaise
* 1/2 cup grated Parmesan cheese
* 3/4 teaspoon garlic powder
* 3/4 cup Italian seasoned bread crumbs
* 4 skinless, boneless chicken breast halves


DIRECTIONS

1!. Preheat oven to 425 degrees F (220 degrees C)!.
2!. In a bowl, mix the mayonnaise, Parmesan cheese, and garlic powder!. Place bread crumbs in a separate bowl!. Dip chicken into the mayonnaise mixture, then into the bread crumbs to coat!. Arrange coated chicken on a baking sheet!.
3!. Bake 20 minutes in the preheated oven, or until chicken juices run clear and coating is golden brown!.Www@FoodAQ@Com

Try marinating your chicken and cooking it with vegetables on skewers!. You can broil them or cook them on the grill!.

A great marinade is yogurt (believe it or not), lemon juice, salt, pepper, cilantro, garlic and a pinch of cumin!. Blend it in the blender and pour it over the chicken!. The yogurt actually tenderizes the chicken!. I cook it on the grill, and it is moist every time!.

Sautee them in extra virgin olive oil, with fresh vegetables, like a stir fry, Add some garlic and ginger, maybe a little teriaki!. Nonfat yogurt, oven-baking, and hot sauce makes them a delicious and healthful treat!. Don't be scared off by the quantity of hot sauce as the yogurt thoroughly tames the spice!. Please note that removing the chicken fat and using nonfat yogurt makes this dish virtually fat-free!. (For maximum safety, HIGHLY recommends triple-washing method!.) Prep time does not include chilling time!.

Ingredients
6 lbs boneless skinless chicken breast, fresh, not frozen
32 ounces plain nonfat yogurt
1/2 cup hot sauce (like Frank's Red Hot)
1 tablespoon poultry seasoning, blend (like Mrs!. Dash Grilling Seasoning for Chicken)
1 tablespoon onion powder
1/2 tablespoon garlic powder (like McCormick California Style Garlic Powder with Parsley)
1 (21 ounce) box cornflake crumbs
Directions
1To Triple-Wash Chicken: Remove chicken breasts from pkg and place in colander!. While rinsing chicken in colander with cold water, trim fat from each chicken breast with kitchen scissors!. Place trimmed breast into separate bowl; do not return to colander! (Reserve trimmings for making chicken broth, if desired!.) Once all breasts have been trimmed of fat, wash colander and kitchen scissors!. Then return breasts to colander and rinse with cold water again!. While rinsing, use kitchen scissors to cut breasts into strips or chunks (more kid-friendly), placing pieces into separate bowl!. Do not return to colander! Once all breasts have been cut into pieces, wash colander!. Return pieces to colander and rinse chicken one more time; drain well!.
2Place yogurt, hot sauce, and seasonings into gallon-sized Ziploc Freezer bag!. Mix well!. Place chicken pieces into bag and mix well, making sure pieces are covered!. Refrigerate in the coldest part of fridge at least 4 hrs or overnight!. The colder the chicken, the better the results!.
3Preheat oven to 450 degrees F!. Line large baking sheet with Reynolds Release Foil!. Lightly coat foil with canola oil or spray with non-stick cooking spray!.
4Place 1/3 box of Corn Flake Crumbs into gallon-sized Ziploc Freezer bag!. Put approximately 10 chicken pieces into bag and shake to coat!. Remove pieces from bag and place on baking sheet (about 20-25 pieces/sheet)!. NOTE: After coating 20-25 pieces, discard Corn Flake Crumbs and put another 1/3 box into bag!. Repeat as necessary!.
5Bake 12 minutes; do not turn pieces over! Chicken will be golden brown on top!. Do not overcook or chicken will be tough!.
6Serve with your favorite dipping sauces and raw veggies!. also great on buns and in wraps topped with your favorite greens, tomatoes, (red &/or green) onion, and other veggies!. For condiments, we like light ranch dressing and flavored mayos and mustards!. BBQ sauce would be great, too!
7NOTES: In order for coating to adhere properly, chicken mixture must be very cold!. To make spicier, add cayenne pepper or use a hotter hot sauce or chili sauce!. Use different seasoning blends such as poultry seasoning, other kinds of Mrs!. Dash, or Paul Prodhomme's (love these!)!.Www@FoodAQ@Com

mccormicks taco seasoning, i like the hot!.!.
coat them with that
let sit for at least 30 minutes
put in baking pan
cover with salsa, again, i like the hot stuff
bake at 350 for about 30 minutes
sprinkle with sharp cheddar while in oven, after turning oven off
take out when cheese is melted
top with sour cream

Skewer them baste with teriyaki then serve with a peanut sauce
2 Tblsp!. Peanut butter
1/4 c!. soy sauce
2 Tblsp!. Rice wine vinegar
1 teaspoon garlic
blend together in sm!. sauce pan bring to boil turn off serve with chicken skewers and rice with veg!. quick good healty!.Www@FoodAQ@Com
