Boiling condensed milk to make dulce de leche?!
Is the water supposed to come to a boil, because the can is making noise, but I can't tell if it's because the milk in the can is boiling or the water under the can!. I don't want to boil it too rapid because I really don't want the can to explode, but I also want the milk to be caramelized!.!.!.!. any help!?Www@FoodAQ@Com

it's probably air bubbles under the can!. The risk of doing it that way is boiling the water dry and ruining the pot/can and/or starting a fire!. Try it this way instead:
To caramelize sweetened condensed milk:
Pour the condensed milk into a 9x12x2" glass baking dish!. Cover with foil and place dish inside a larger poaching pan!. Add water to larger pan until half way up sides of baking dish!. Bake for 1? hours at 350oF!.Www@FoodAQ@Com
