You don't have to use an egg, but it holds the cheese mixture together so it doesn't goo out the sides when ya cut it!. That is the only reason for using the egg!. It's not for flavor or anything like that!. No one can tell if you add the egg or not, really!.!.!.sorta a waste of an egg if ya ask me!. Sometimes I do, sometimes I don't!.Www@FoodAQ@Com
