How about a pork tenderloin!. Very easy to make and most people enjoy pork tenderloin!. Here is my recipe:

Garlic - Pepper Seared Pork Tenderloin
1 (2 pound) pork tenderloin
2 tsp garlic powder
1 tsp salt
2 tsp black & red pepper seasoning
1 tbs Olive Oil

Trim fat and silver skin from tenderloin!.
Mix seasonings, rub mixture all over meat!.
Cover with plastic wrap, set out for 30 minutes!.

After 20 minutes, turn oven to 425 degrees!.
Place oven safe skillet on stove, large enough to
hold meat, turn to medium-high heat, add olive oil!.

When oil begins to ripple, place tenderloin
in skillet with tongs, don't move it!. Let sear
for 2 minutes, turn over & sear 2 minutes!.
Repeat process until all sides are seared!.

Put skillet in oven & cook approximately
35-40 minutes, or 20 minutes per pound!.
Check meat thermometer, internal temperature
at 155 degrees!.

Remove from oven, place on cutting board,
cover with foil!. Let rest 10 minutes before slicing!.
Temperature will rise to 160 degrees,
medium (slight pink center)!.

Notes:
Note

The skin of a ripe mango is yellow and red, and its flesh yields to gentle pressure!. If you purchase a mango that is underripe (green and firm), put it in a paper bag and keep it at room temperature to ripen!. Once the mango is ripe, you can refrigerate it for a couple of days before using!.

Wine

Very often, ripe rieslings from Germany's warm Pfalz region taste of tropical fruits, including mangoes!. This, along with their racy acidity, relatively light body, and low alcohol, makes them delightful sidekicks for cool summer salads!.Www@FoodAQ@Com

The heat from the oven is going to make your house hotter!. Consider making something from the top of the stove in order to avoid heating it further!. You might consider:

1!. Meatballs in gravey, mashed potatos, fresh green beans
2!. Shrimp bisque in bread bowls
3!. Add hard cooked egg, black olives, tuna, and asparagas to your salad to make it more of a main dish!.
4!. Sandwiches: Grilled ham and cheese; tuna, black olive, sweet relish, and cream cheese; turkey and green chili panini
5!. Spaghetti
6!. Soup: Vegetable, cold beef borscht, chicken tortillaWww@FoodAQ@Com
