What should I make with pumpkin?!
I have a whole pumpkin (my parents are growing them and keep giving them to me!!!)
I need some recipes other than pumpkin soup or roasted pumkin! Oh and if anyone has a really good recipe for pumpkin scones I'd love to hear it!. (My scones taste great but they look funny!)Www@FoodAQ@Com

Spicy Pumpkin Dip
1? cups canned pumpkin puree
1? cups canned chickpeas, drained and rinsed
3 Tbsp!. tahini (sesame seed paste)
1 clove garlic
1 tsp cayenne
1 tsp cumin
2 Tbsp!. olive oil
2 Tbsp!. lemon juice
Salt and pepper to taste
In a food processor, process pumpkin and chickpeas until fairly smooth!. Add remaining ingredients to food processor and process until smooth!. Season to taste with salt and pepper!.!. Serve with pita chips!.
Makes 3 cups

Pumpkin & Date Scones
makes 18
? cup sugar
2 Tbsp!. butter
1 tsp!. pumpkin pie spice
? tsp!. salt
1 large egg
1? cups chopped dates
1 cup canned pumpkin
2 cups S/R flour
1!. Preheat oven to 425oF and spray baking pan w/ nonstick cooking spray!.
2!. In medium bowl, combine first 4 ingredients!. Beat with mixer, then add egg, beating well!. Add dates and pumpkin, mixing in at low speed!.
3!. Gradually add flour, beating at low speed until mixed!. Batter will be sticky!. Press evenly into a scone pan, or pat into a circle and cut triangles, place on bakign pan!.
4!. Bake at 12-15 minutes!.

MOLASSES PUMPKIN BREAD
1/3 cup shortening or butter
1 cup brown sugar
2 eggs
1/2 cup molasses
1 cup pumpkin or banana or sweet potato
1/3 cup heavy cream
2 cups flour
1/4 tsp baking powder
1 tsp!. baking soda
1/2 tsp!. salt
1 tsp!. cinnamon
1/2 tsp!. ginger
1/2 tsp ground cloves
1 tsp!. nutmeg
1 tsp!. vanilla or Nocello (walnut liqueur)
1 cup chopped walnuts
Cream shortening and sugar!. add eggs!. Add molasses, cream and pumpkin!. Add remaining ingredients and mix it all up!.
Bake at 350oF in a greased loaf pan for 1 hour or until a toothpick comes out clean!.

Yield: 6 servings
1 3/4 cups (15-z can) LIBBY’S? 100% Pure Pumpkin, chilled
1? cups (12 fluid-oze can) NESTLé? CARNATION? Evaporated Milk, chilled
1? cups orange juice
? cup (1 small) sliced banana
1/3 cup packed light brown sugar
Ice cubes (optional)
Ground cinnamon (optional)
PLACE pumpkin, evaporated milk, orange juice, banana and sugar in blender; cover!. Blend until smooth!. Sprinkle each glass with cinnamon, if desired!.

Every Fall I make pumkin fritters!. It's not an exact science, I kind of wing it but here are the ingrediants!.
flour, condensed milk, powdered sugar (for dusting on top afterwards), eggs, vanilla extract, brownsugar, pumkin pie spice, or cinammon and nutmeg!. Mix together till you get a think batter then fry!. Dust with powdered sugar and eat either warm or cool!.
