What to do with chicken breasts?!


Question: What to do with chicken breasts!?
I have chicken breasts in my fridge that I don't know what to do with!. Any suggestions for recipes!? PS, I don't want chicken parm!.Www@FoodAQ@Com


Answers:
- Marinate in Italian dressing then grill (simple but very, very good!)
- Saute in a bit of olive oil til cooked, then add 1 can diced tomatoes and a splash of balsamic vinegar; simmer 10 mins!.
- Saute til cooked, then add sauce made of 1 can condensed tomato soup, 1 Tb vinegar, 1/4 cup brown sugar, 1 Tb prepared mustard; simmer 10 mins & serve over rice
- Place on a baking sheet, drizzle with lemon juice, top with feta cheese crumbles and bake at 350F for 30 minutesWww@FoodAQ@Com

GREAT thing to have on hand!. Chicken is probably the single most versatile meat!. Here's a simple but famous sautee!.
***Chicken Piccata***

Serves 4

4 Boneless, skinless chicken breasts
2 Tablespoons Olive oil
1/2 cup Flour
Salt and white pepper to taste
1 cup Chicken broth
1/4 cup White wine (dry)
1 tablespoon Lemon juice
1 1/2 teaspoon Cornstarch, mixed with a little cold water (optional)
1 Tablespoon Capers
1 Tablespoons Parsley, chopped

? Heat the oil in a heavy skillet!.
? Season the flour lightly!. Dredge the chicken in the flour
? Add to the oil until fully cooked!. Remove the chicken!. Keep warm!.
? Add the broth, wine, and lemon juice to the hot pan!. Over medium-high heat, allow the mixture to boil!.
? Whisk in the cornstarch mixture and return to a boil (if you want a thicker sauce)!.
? Remove from the heat and toss in the capers!.
? Serve over the chicken!.

CHICKEN CORDON BLEU CASSEROLE

3 skinless, boneless chicken breasts, cut into one-inch pieces
Italian seasoned bread crumbs
1 egg
1/2 cup milk
8 ounces Swiss cheese, cubed
8 ounces ham, diced
1 (10 ounce) can cream of chicken soup
1 additional cup milk

Beat egg and stir in 1/? cup milk!. Dip chunks of chicken in egg mixture and then into bread crumbs, coating well!. Brown in a little oil until golden!. (Chicken does not have to be completely cooked here, will complete in oven!.) Place chicken in baking dish!. Add cubes of Swiss cheese and ham!. Mix soup and 1 cup of milk; pour over all!.

Bake at 350 degrees for about 30 minutes, until hot and bubbly!. Serve with egg noodles!.

there's actually lots of things you can do with chicken breasts!. I usually make chicken and brocalli with a stir fry sauce and serve over rice!. Usually when I can't come up with recipes on my own, I just go online and type in recipes or in your case, chicken recipes and you will get loads of results!. Good Luck!.Www@FoodAQ@Com

SJ-SC-CA Incredible Chicken Salad

3 cups chicken breast (cooked and cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice

although I would honestly love to have whatever is left over from riverkids dinner!.!.!. I love to pound them flat to tenderize and then just roll in egg and then bread or cracker crumbs witha tsp or so of whatever your favorite seasonings are!.!.!. I love Cajun seasoning myself!. Add salt and pepper to your liking as well!. brown them in a pan, remembering they cook faster the flatter they are!. YUMMY !!! (crumbs keep 'em from drying out so easily) I love these for summer because they are great with salad, but there is some "weight" to the breasts when breaded and it feels like comfort food without being too heavy for hot weather!.Www@FoodAQ@Com

Fry them in a pan on medium heat!. Keep the lid on throughout the process and add a little water to the pan once in a while to keep them moist!. You actually end up steaming them more then frying them, but they end up tender and juicy!.

Add whatever spices and seasonings you like at the beginning!. I like to give them a good sprinkling of Lawrey's (sp!?) Seasoning Salt and just a touch of garlic salt!.Www@FoodAQ@Com

cover bake the chicken breasts(they have been marinating)in the oven for about on hour shred with two forks!. make a peanut thai sauce and make wraps!. i did that last night and it was quite delicious!.Www@FoodAQ@Com
