Grilling for Father's Day .......Need some help!!?!


Question: Grilling for Father's Day !.!.!.!.!.!.!.Need some help!!!?
My dad has asked me to come over & grill for Father's Day instead of fighting the crowds out ( plus, it will be his first without my brother whom we lost last November)!.!.!.!.!.Anyhoo!.!.!.!.I've got 2 issues!.!.!.!.

First - we grill on charcoal at the house, but my parents have a nice gas grill!. How do I adjust cooking times & temps to get mine medium & the parents medium/well!?

Second - I use Montreal Steak seasoning & lightly sprinkle, but mom use's Dale's only & lets them soak for a few hours!. What are some good wet marinades without so much sodium!?

While ya'll are at it - I always do grilled corn & bakers, so what are some different yet still simple sides - my dad comes from country folks so fresh veggies are a must!.!.!.!.!.!.!.

We like red & green bell peppers & zucchini, cut in half, brushed with olive oil and sprinkled with Tony Chachere's Creole Seasoning and oregano on the grill !.!.!.!.!.!.!.I like A-1 Texas Mesquite Marinade, although their Chicago Steakhouse has a little less sodium!. I also like Lawry's Baja Chipolte !.!.!.!.!.!. We have a gas grill, and I buy smoking pellets, which don't need to be soaked!. I put them in foil packets and throw them on the grill for a charcoal smokey flavor!.!.!.!.!.!.!. This is one of our favorite family sides:

FRUIT AMBROSIA
2 c!. heavy whipping cream
1/2 c!. sugar
1 tsp!. vanilla extract
1/2 tsp!. almond extract
1 large can mandarin oranges, drained
1-2 cans fruit cocktail, drained (I like Triple Cherry)
1/2 c!. flaked coconut (optional)
3-5 c!. miniature marshmellows
WHip the cream, sugar & extracts until very stiff peaks!. Fold in the fruit & marshmellows!. Chill !.!.!. can make the day ahead!.!.!.!.

In my opinion, the answer to all these 'issues' is simply to remember to recognise the day together, say Grace at the onset of the meal & quit making issues out of trivial nonsense!.
The event should focus on family relationship & bonds with each member rather than how hot the coals or how salty the food!.
Say a little prayer now to quit stressing & start enjoying the opportunity to share a meal & some very valuable time with dad!

You're going to love that gas grill!. It is much easier to adjust the temperature than with charcoal!. There's nothing to it!. If I'm grilling steak I flip it often!.!.!.now here is a funny tip!. I learned this on a cooking show and it works like a charm!. Touch your ear lobe!.!.!.if you touch the steak and it feels as soft as your ear lobe it is rare!. If it feels like the side of your nose it is medium and if it feels like the tip of your nose it is well done!. No kidding!! This method works every time! So just keep flipping so the juices stay inside the meat rather than running out the top and check for doneness every minute after you've had them on the grill for 4-5 min!.
I don't use premade seasonings as they almost always have lots of sodium!. I use minced garlic, pepper and maybe some rosemary!.
As for side dishes!.!.!.make a cole slaw ahead of time to go with you corn and spuds!

For the Gas Grill you open the lid and then turn the grill on, never start the grill with lid closed! That is first!.

Step 1, turn the gas tank on by turning knob, then push the turners on middle "usually pointing up in middle" then press the button to ignite!.
Depending on what you are cooking after you light the grill and heat it, turn the flame down with the turners, usually the heat Gage will tell you what level the heat is on "BBQ, grill, etc" on the front of the lid!.

As for marinating, get some white Zinfandel wine, I only use Berringers!. I never measure, I just pour the wine over the steaks and then I add a few small splashes of terryaki sauce "not a whole lot but enough to turn the wine a light to medium brown" sometimes I sprinkle a little meat tenderizer!. This is a lower sodium marinade that tastes out of this world, isn't overpowering, but gives the steaks a great flavor!. My husband and family and friends always ask me where I get my marinade from and I tell them it is my own invention!.
By the way, the alchohol of course cooks out of the wine from the heat so you won't get intoxicated!

For chicken italian dressing is the best marinade!.

Grilled zuchinni is really good, but usually I steam my veggies and my favorite is steamed green beans!. Corn is okay but some don't digest it well, and with steak it can really bloat you up making you feel like you ate too much!. I would do a veggie that is easy on the system if you are having steak!. You can always wrap a potato in foil, poke a few slits in them and grill those!.Www@FoodAQ@Com
