Answers:
Creamy Cucumber Salad
Dressing
1/4 c sour cream
1/3 c plain yogurt
1 1/2 tsp rice wine vinegar
1 1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
3 cucumbers, thinly sliced
1 Vidalia or red onion, thinly sliced
Combine dressing ingredients!. Toss with cucumber and onion, chill 2 hours!.

Cold Cucumber Salad

2 cucumbers
1 teaspoon kosher salt
1 teaspoon white vinegar
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped fresh dill
Freshly ground black pepper

Peel and slice the cucumbers and put them in a glass bowl!. Sprinkle them with salt and vinegar!. Cover and let stand for 30 minutes!. Pour off the excess liquid and drain in colander for about 30 minutes to allow complete drainage!. Add the mayonnaise, sour cream, dill and pepper, and mix well!. Cover and refrigerate until serving time!.Www@FoodAQ@Com

This is my knockoff leftover recipe!. I don't do much but cut things!. I like English cukes, but I am sure any would do!. Cukes, thinly sliced red onion and quartered bocancini!. That's the base!. Then in a blender mix a bottle of Newman's own Italian with a few marinated mushrooms and marinated Italian hot peppers!. Toss together and let sit for about 1 hour!. It's great!.Www@FoodAQ@Com

* 4 medium cucumbers, thinly sliced
* 1/2 cup vinegar
* 1/4 cup cold water
* 2 tablespoons chopped dill
* 3 tablespoons sugar
* 1/2 teaspoon salt
* dash pepper

PREPARATION:
Combine sliced cucumber with all other ingredients; cover and refrigerate for 2 to 3 hours before serving!.
