Chicken Casserole
2 sleeves Ritz crackers
3 or 4 chicken breasts, boiled, cooled and removed from bones and shredded!.
1 (8oz) sour cream
1 can cream of chicken soup
salt and pepper to taste
1 stick butter
Melt butter, mix 1/2 with one sleeve of the crushed crackers!. Spread in bottom of 9 x 13 glass casserole dish!. Spread chicken on crackers, you might have to use your hands to keep from messing up the cracker layer!. Mix sour cream, soup , salt and pepper and some of the chicken broth together (don't make it too liquidy - about 1 cup or so)!. Spread this on the chicken!. Mix the other half of butter with the other sleeve of crushed crackers!. Bake at 350 degrees for 20-30 min or until crackers are a golden brown!.

ORIENTAL RICE CASSEROLE:
Heat 2 tbsp cooking oil on medium high!.
Scramble fry 1 lb ground chicken, 5-10 minutes, with:
1 cup each sliced celery, chopped onion, diced red pepper!.
Drain excess fat, add 2 cups frozen peas,
1 1/2 cups bean-sprouts, 1 1/2 cups long grain rice,
10 oz can mushrooms, 3 tbsp soy sauce!. Remove from heat!.
Combine 10 oz can mushroom soup, 1 cup hot water,
1 tbsp oyster sauce, 1/2 tsp 5-spice powder, 1/2 tsp pepper!.
In large bowl, add chicken mixture, stir well!.
Spread evenly in ungreased 4 qt casserole!.
Cover & bake in 350F oven for 45 minutes!.
Stir once at half-time, until rice absorbs liquid, & is tender!.
Sprinkle with chow mein noodles before serving!. Serves 6!.Www@FoodAQ@Com

Directions
1-bake chicken and shred it into small peices
2-Preheat oven to 325 degrees and grease 9x13 pan!.
3-Mix stuffing, and melted butter together in large bowl!.
4-Layer some stuffing mixture into pan, then layer of chicken!.
5-Mix 1 can of soup with a can of broth!.
6-Pour over the layer of chicken!.
7-Repeat layer of stuffing, and chicken!.
8-Mix the other can of soup with 1 can of broth!.
9-Pour over chicken!.
10-Sprinkle a small amount of stuffing on top of dish!.

Oh yes! I get the already cooked rotisserie chicken at the grocery store - take off the chicken you prefer & chop it up!. Then I cook one cup of instant rice according to the box directions - throw in a chicken boullion cube, chopped up celery if you have any when the water starts boiling!. Once the rice is cooked and you've chopped up the chicken put it in a large baking dish, add a can of mushrooms, can of sliced water chestnuts, can of cream of mushroom soup & can of cream of chicken!. Add the seasonings you prefer - garlic salt, pepper, etc!.!.!. Bake at 350 for 30 minutes or until bubbly!. (Sometimes if you I have time I sautee the celery & chopped onions in butter!)Www@FoodAQ@Com

In lightly greased casserole dish, mix together 2 - 3 cups of chicken, cooked & cubed!. Add 1 pkg of Lipton instant rice, brocoli/cheddar, 1 can cream of chicken soup, 1 can of golden mushroom soup and 1 can evaporated milk!. Top with 1 sleeve of crushed Ritz crackers and several pats of butter, then bake @ 350 for about 30 - 40 minutes!.!.!.!.!.!.You can add shredded cheese to the top the last 5 minutes or so if you like!.!.!.!.!.!.!.It's good either way!Www@FoodAQ@Com

Chicken and Rice Bake



1 whole chicken, 6 leg quarters, 6 chicken thighs, or
6 chicken breast halves

1 cup uncooked rice
1 can cream of chicken soup
3 chicken bouillon cubes
2 tsp salt

Preheat oven to 375o!. Melt bouillon cubes in 1 cup hot water, set aside!. In 9x13 baking pan thoroughly mix soup and 2 cups water and salt!. Add bouillon and mix well!. sprinkle rice evenly over mixture!. Evenly lay cut chicken over this!. Sprinkle lightly with salt!. Slowly add enough water at one corner to barely cover chicken!. Bake for one hour at 375o!.

Our favorite chicken dish now is Chicken Alfredo!.

You can cook chicken breasts to cut into bite-sized pieces, or use leftovers from KFC or wherever and pull the pieces off the bones!. I use the 4-cheese alfredo sauce in a jar and cook up some pasta - flat noodles, linguini, or large shells!.Www@FoodAQ@Com

Black Bean Chicken Enchiladas


3/4 lb boneless skinless chicken breasts, cooked and shredded
3 slices bacon
2 garlic cloves, minced
1 1/2 cups picante sauce, divided
1 (16 ounce) can black beans, undrained
1/2 cup bell peppers, chopped (green or red)
1 teaspoon cumin
1/4 teaspoon salt
1/2 cup green onions, sliced
12 (6 inch) flour tortillas
1 1/2 cups Monterey jack cheese, shredded


1!. In a skillet, cook bacon until crisp!.
2!. Drain on a paper towel and crumble!.
3!. Pour off all but 2 tablespoons of bacon fat from the skillet!.
4!. Add chicken and garlic to the skillet and cook until garlic is fragrant!.
5!. Stir in 1/2 cup picante sauce, black beans, chopped pepper, cumin,
and salt!.
6!. Simmer until thickened, about 8 minutes, stirring occasionally!.
7!. Stir in green onions and bacon!.
8!. Spoon 1/4 cup bean mixture down center of each tortilla and top
with 1 tablespoon cheese!.
9!. Roll up and place seam-side down in a lightly greased 9x13 inch
baking dish!.
10!. Spoon the remaining picante sauce evenly over enchiladas!.
11!. Top with remaining cheese!.
12!. Bake at 350 degrees for 25 minutes!.


Almost Home Made Chicken Stew

2 large cans cooked chicken, drained
2 cans diced or crushed tomatoes, undrained
1 can sliced potatoes, drained
1 can French cut green beans, drained
1 can sliced carrots, drained
1 small can sliced mushrooms, drained
? tsp!. instant minced onions
? tsp!. minced garlic
? tsp!. celery seeds
? tsp!. dried rosemary
1? tsp!. dried parsley flakes
1/8 tsp!. black or red pepper
2 tbsp!. all-purpose flour
? cup water


1!. Combine all ingredients except chicken, flour, ? cup of water
and parsley flakes in a large pot or Dutch oven!.
2!. Bring to a boil over medium/high heat!.
3!. Meanwhile, dissolve flour in ? cup of water and stir into stew!.
4!. Continue to cook until liquid thickens to desired consistency;
stirring frequently!.
5!. Add chicken along with parsley and reduce heat to medium/low!.
6!. Simmer stew for about 8 minutes or until chicken is thoroughly heated!.

Makes 6 to 8 servings


Chicken Potato Casserole

1 lb!. cooked chicken, shredded
1 onion, chopped
1 can green beans, drained
1 can cream of mushroom or cream of chicken soup
8 oz!. cubed cheddar cheese
8 oz!. shredded cheddar cheese
4 cups prepared mashed potatoes

1!. Preheat oven to 350 degrees!.
2!. Place chicken in an even layer on the bottom of a 9” X 13” baking dish!.
3!. Top with a layer of onions and a layer of green beans so that chicken is no longer visible!.
4!. Pour soup over the layers and top with shredded cheese!.
5!. Stir together cubed cheese and mashed potatoes!.
6!. Spoon over the top of the casserole and spread to cover!.
7!. Bake for 30 to 40 minutes (until thoroughly heated)!.


Italian Chicken Bake

2 to 3 lbs!. whole chicken, cut into parts
1 can diced or stewed tomatoes
4 potatoes, peeled and quartered
1 onion, quartered
1 small can mushrooms, drained
2 cups sliced zucchini
1/8 tsp!. garlic powder
1/4 tsp!. dried basil
1/4 tsp!. salt or less


1!. Preheat oven to 350 degrees F!.
2!. Wash and cut up chicken!.
3!. Place chicken into a small roasting pan or Dutch oven!.
4!. Add potatoes, onions, mushrooms, zucchini, tomatoes and seasoning!.
5!. Cover and bake for 45 to 55 minutes or until chicken is done!.
6!. Serve with Italian green beans if desired!.


Easy Chicken Tetrazzini

16 oz!. pkg!. uncooked spaghetti or ziti noodles
? Cup Butter or Margarine
? Cup All-Purpose flour
3 Cups Chicken Broth
2 Cups Milk
1 2/3 Cups grated Parmesan Cheese
4 Cups chopped cooked chicken


1!. Preheat oven to 350 degrees!.
2!. Lightly grease medium baking dish!.
3!. Bring large pot of slightly salted water to a boil!.
a!. Add pasta and cook for 8 to 10 minutes!.
b!. Drain pasta and place in prepared baking dish!.
4!. Melt butter in saucepan over medium heat!.
a!. Stir in flour!.
b!. Mix in broth and milk
c!. Cook and stir until the mixture comes to a boil
d!. Sir in 1 1/3 cups of cheese and remove from heat!.
5!. Mix broth mixture and chicken with pasta in baking dish!.
6!. Top with remaining cheese
