Question: Recipe for family Gathering!?
Hey guys!. Ok i am having my whole family (about 10 people) over for dinner on the weekend!. Well i made the mistake of cooking a fancy meal for my aunt (as it was just her) and she's been raving to everyone about my "Cooking" abilities haha, so i think they all now have high expectations as i have never cooked for them before!.

I need some ideas!.!.!.for something that will WOW them, as well as that i can do most of the prep work before hand so that i am not spending the whole evening in the kitchen instead of beign a good hostess!.

So far i am thinking BBQ Shrimp as an appatizer (I will marinade them in a Butter/Lime/Garlic sauce ahead of time and then toss them on the bbq when they are needed)

And i can maybe make a chocolate cheese cake the night before!?!?

HELP, I need ideas for EVERYTHING!. What would you COOK for a family, they aren't fussy, except NO CHICKEN, but everything else is fine!.

Answers:
For the main course, marinate some rib eye or NY Strip steaks and then grill - make sure your marinate compliments that of your shrimp or instead of grilling the shrimp, make shrimp cocktail with homemade cocktail sauce!.

Roast some ears of corn in their husks or potatoes seasoned and wrapped in foil in the coals before you grill your meat!.

Steam some fresh veggies like baby carrots, green beans, broccoli and cauliflower together with some slices of bell peppers and fresh mushrooms!. Toss with some oil and vinegar or a vinaigrette dressing and serve either warm or cold!.

A fresh fruit salad with your favorite fruits topped with either sour cream, plain yogurt or fresh whipped cream!.

Steam some fresh asparagus spears and toss with butter and garlic!.

Your chocolate cheesecake sounds wonderful - here is an idea for you if you want to really WOW them with it, make it with a touch of either Irish Creme or Kahlua liqueur for a really unique taste!.

what a about broiled seafood sandwiches!? some crab meat and celery tossed lightly with cream cheese,lemon juice, and pepper!.you could even add hard boiled eggs to this!.than just put on a toasted bun with a slice of tomato!.Www@FoodAQ@Com

my mom made an awesome dish and it didnt take her long!. i dont know what its called butit has asparagus, parmesan, boneless pork ribs, bacon, bar-b-q sauce and a little olive oil !.


she marinaded the ribs the night before in bar-b-que sauce!. The next day she cut the asparagus in 4ths and sliced the cheese!. she put the ribs, asparagus,and bacon!. she put a little olive oil on her george foreman grill!. and then put everything in the dish on the grill for like 5 min before she put the cheese on!. it was very good and easy!.

Spinach Enchiladas!.
In a blender mix the following:
1-can cream of mushroom soup
1-cup sour cream
1- 4oz can of chopped chilies
2- scallions
1-10oz box of frozen spinach, thawed
a clove of garlic - not a head, just a clove!.

Pour half of this in a 9x13 baking dish!.

Then combine 2 chopped onions and 3 cups of grated cheese, I use the Mexican cheese mix from the grocery store!.

Heat 2 packages of corn tortillas in the microwave a minute each!.
In a tortilla roll a 1/4 cup of the cheese mix and place seam side down in the batter!. You should get 2 dozen tortillas lined up in two rows!.

Pour the rest of the batter over the top, cover with another cup of grated cheeses and bake 30-40 minutes in a 350 degree oven!.

BBQ SALMON filets - brush with olive oil and sprinkle with Tony Chachere's Creole seasoning and lots of dried dillweed!. Grill 5-8 min!. on each side, until flakes!. Serve with this sauce: equal portions of Dijon mustard & sour cream, mixed with 2 TB!. of dillweed !.!.!.!.!.!.

Rice Pilaf !.!.!.!. Fruit Salad (hollow out 1/2 watermelon and refill with the cubed melon, berries & pineapple; garnish with sliced starfruit & fresh mint sprigs)

Mixed Baby Greens Salad: toss some walnuts or pecans in sugar in a frying pan, until sugar melts & coats the nuts !.!.!.add with sliced strawberries or raspberries, and sliced red onion!.!.!. toss with storebought Raspberry-Walnut or Raspberry-Pecan Vignarette dressing!.!.!.!.

You could put fresh fruit in the center of the pound cake

This is the absolute best recipe !!!! I got a blue ribbon at the fair with this one!.
There is no need for frosting, one of the most moist cake I have ever eaten!.

CREAM CHEESE POUND CAKE

1 cup margerine, softened
1/2 cup butter, softened ( do not substitue)
8 ounces of cream cheese, softened
3 cups sugar
6 eggs
3 cups flour
2 tsp vanilla

Combine first 3 ingredients
Creaming them well
Gradually add sugar, beating until light and fluffy
Add eggs 1 at a time, beating each one
Add flour mixture to creamed mixture, stirring until combined
Stir in vanilla

Pour batter into well greased 10 inch tube pan, bundt pan or 2 laof pans
Bake at 325 for 1 hour and 45 min ( YES 1 HOUR AND 45 MIN ) , if using 2 loaf pans check with toothpick, time may vary
Cool in pan for 10 min
Remove and cool completely






If you like coconut!.!.!.!.!.!.!.!.!.!.this is the most wonderful cake !!!!!

White On White Cake
18- 24 servings

1 box white cake mix
15 oz can cream of coconut
8 0z of frozen whip cream
14 oz flaked coconut

In 9x13 pan, bake cake according to directions
Using a fork poke holes in baked cake, while warm
Spoon cream of coconut over it
Cool completely
Spread whip cream over cake
Sprinkle with coconut
Keep refrigerated, wonderful while cold





Chocolate Mousse Torte
This is the ultimate cake of cakes !!!! Takes a little time but very impressive !!

CAKE
3 foil wrapped bars (total 6 oz ) Semi-sweet chocolate baking bar
1 1/4 cup water, divided
2 1/4 cup flour
1 tsp baking soda
1/4 tsp salt
1 1/2 cup sugar
1/4 cup butter, softened
1/4 tsp vanilla
2 eggs

MOUSSE FILLING
1 foil wrapped bar ( 2 oz) Chcocolate semi- sweet baking bar
2 TBSP of sugar
1 1/2 cup heavy cream, divided

Melt 2oz bars and 1/2 cup whipping cream over water or in micowave!. Let cool to room temp!.
Whip 1 cup whipping cream with 2 TBSP to stiff peaks
Gently fold in melted chocolate!. Use as directed below

VIENNESE GLAZE
4 foil wrapped bars ( 8 oz ) semi- sweet chocolate baking bar
2/3 cup heavy cream
3 TBSP powdered sugar
1/4 tsp vanilla

Cake
Preheat oven to 375
Combine over hot water ( not boiling)
3 baking bars and 1/4 cup water
Stir until bars are melted and mixture is smooth
Set aside
Combine flour, salt and baking soda
Set aside
Combine sugar, butter, and vanilla, beat well
Add eggs one at a time
Blend in chocolate mixture
Gradually add flour mixture with 1 cup of water
Spread into 4 greased 9 inch round pans

This will not take long to bake!. Original recipe calls for 2 pans and then splitting cakes which is a crumby mess!. The 4 pans is much quicker and makes a much nicer cake!.

Cool cakes and remove from pans
Spread 3 of the layers with the mousse filling ,placing the 4th cake on top with no filling
A good idea is to put this i the refrigerater a few min, to set the filling before putting on the glaze
The glaze will set very fast and it will have a veery nice smooth look to it!.

GLAZE
In med pan over low heat
Combine chocolate bars, heavey cream, and powdered sugar
Stir untill mixture is smooth
Add vanilla
Transfer to small bowl
Cool to room temp
Pour over cake

If I make this in the summer I like to get leaves like lilac ones, wash them and dry
Brush the top of the leaves in melted chocolate and put in freezer on wax paper to harden
Carefully peel off leave and place the 3 chocolate leaves in the center of the cake



Olive Garden Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained

In a saucepan combine butter, heavy cream, and cream cheese!. Simmer this until all is melted, and mixed well!. Add the Parmesan cheese and garlic powder!. Simmer this for 15 - 20 minutes over low heat!.

Toss pasta lightly with sauce, coating well!. Leftovers freeze well!.




Grilled Ranch Bread
1/2 cup butter, softened
1 (1 ounce) envelope Hidden Valley
Original Ranch Salad Dressing Mix
2 loaves French bread

Combine butter with Salad Dressing Mix!.

Slice French bread lengthwise, and spread tops with butter mixture!. Place bread under broiler until crispy and golden brown!.Www@FoodAQ@Com
