How do you make really nice roast potatoes?!

Understood!.!.!.!.!.!. but look at recipes for either English or Greek potatoes!. The method is different but the technique holds true!. Parboil or steam then roast gets that phenominal crust that many have never experienced!.

Do not par boil!. Roasted veggies are the best!.
Cut the potatoes into 3/4" to 1" wedges!. Toss with evoo until all pieces are coated!.Salt and pepper the potatoes!. Toss until salt and pepper have evenly disbursed!. Place potatoes in a baking pan!. If desired, sprinkle 1 teaspoon of crushed dried rosemary over the potatoes!.
Bake at 425 about 15-20 min, flip all the potato pieces over Another 15 minutes in the oven and the potatoes should be done!. You can keep cooking to achieve the level of color that is desired on the cut side of the potatoes!.Www@FoodAQ@Com

* 3 sprigs fresh rosemary (or any fresh herb you want)
* salt and pepper
* chicken or beef stock (preferably homemade)

I like to cook them first, then roast them!. If I am at home, I would microwave them, covered with seasonings on a plate under plastic wrap, until they were cooked through!. If I was at work, I would par boil or stem them until cooked through!.
Immediately after cooking, I would toss them in olive oil and make sure they were seasoned through!.

I'm a big fan of deep fried potatoes but this works just as well if you roast them!. Par boil your potatoes then drain!. Put you drained potatoes in a large colander or a large pot then toss them about until you create jaggered edges on the outside of the potatoes!. I don't think it matters what type of oil you use!. Cook at 180 celcius for about an hour and a half or abit longer if you want them even crunchier!. season with whatever you like after they're done!. The jaggered edges make them even more crispier than if they're roasted as usual!. Hope you enjoy them!.Www@FoodAQ@Com

In a large bowl, or food storage bag, place the potatoes, and add one package of Lipton Onion Soup Mix, and 1/3 cup of cooking oil!. Stir or shake well to coat all the potatoe pieces well!.
Spray a 9x13 backing dish with non-stick spray, before putting in the coated potatoes!.
Preheat the oven to 425* F!. Cook for 45 minutes to 1 hour, stirring at least once!.

Don't par-boil them!. Just peel, wash, pad dry with paper towel and coat with your favourite oil and seasonings!. Then bake at them at a high temperature (between 400 and 425, depending on the power of your oven) until they are golden brown and tender inside!. It usually takes about 30 minutes!.
